Cabbage-Carrot Casserole
Had to substitute olive oil for the butter and used low fat cheese, but this was good! thanks for the recipe!

Grandmother's Buttermilk Cornbread
This is wonderful, and as someone who always screws up cornbread, this recipe has proven itself infallible. Two things. I use fake out buttermilk (combine vinegar with milk) and I let the "buttermilk" and cornmeal "soak" for about five minutes before mixing everything together. It hasn't failed me yet!

Big Soft Ginger Cookies
I didn't have any issues with this recipe. I substituted the recommended oj for water, but only because I didn't see the point of using water when oj might make a difference in the flavor. Meh. I probably still would have flattened the cookies more than "slightly", except the last batch I forgot, and they did that great crinkle that the picture shows. It is a dynamite little cookie, and easy to roll in the sugar, didn't seem sticky like the complaints. Oh, what size walnuts are they talking about? I still got three dozen good size cookies out of this recipe!
