Oyster and Mushroom Stuffing

Absurdly simply and insanely delicious!!!! If you love oyster stuffing, this is fantastic! The oyster flavor is present throughout, yet not overwhelming for those who are not oyster fans. I used one bag of Pepperidge Farm herbed bread stuffing for this recipe and it was the perfect amount. Cajun seasoning is a great addition, as well. Thanks for the great recipe!

Beef Barley Vegetable Soup

Absolutely the best vegetable beef soup I have ever made!! I stayed pretty true to the recipe. I had a hot grill available the night before I was going to make this soup, so I seasoned the chuck roast with salt & pepper and seared it on both sides on the grill. I placed the roast in the bottom of the crock pot and added all ingredients except the barley and placed in refrigerator overnight. I left the carrots & celery in larger chunks so they would not break down. I placed the crock in the pot and set it to low before going to work the next morning. When I got home about 9½ hours later, I removed the chuck (it was in 4 large pieces) and added the barley. While the barley was cooking, I shredded the beef. It was cooked perfectly, fork tender and moist, but not falling apart and the vegetable in the larger chunks were tender without disintegrating. I added the beef back to the pot and dinner was ready! Health Nut Blueberry Muffins

Didn't have oat bran, so I substituted Bob's Red Mill 10 grain cereal. Muffins were moist and delicious! Only made enough batter to fill 9 cups in my muffin pans, but I can live with that!

Super Sausage Gravy

This is definitely the best and the easiest sausage gravy EVER!! Like other reviewers, I doubled everything except the sausage. This made 4½ cups of gravy. The consistency was perfect! Thanks for sharing!!

Light Pesto

I was looking for a lighter recipe to satisfy my wife"s pesto cravings. I'm glad I found this one. This is absolutely incredible with seafood! We just tossed it with whole wheat angel hair pasta and threw in some freshly boiled shrimp. A super-easy weeknight "gourmet" meal! Thanks!!

Fluffy Pancakes

Rhode Island Clam Chowder

I've made this twice now and this is a really good "quick & easy" recipe. My only substitution was canned clams for the shucked clams (3 cans). I'm sure it would be even better with freshly shucked clams. The first time I made it, since I love spicy food, I used all of the pepper called for in the recipe, even though I knew it was a lot. It was too hot for my wife to enjoy, although she said the flavor was great. The next time I made it, I only used 1T black pepper and a few dashes of hot sauce. I omitted the cayenne. She loved it!! Thanks for the recipe!

Black Bean and Salsa Soup

Outstanding!!! My wife loves black beans and she raved about this when I made it. I made this as written, but increased the quantity to make six servings. This gave me the extra can of beans to add whole as other reviewers suggested. The whole beans don't change the flavor, but they do add a nice texture to the soup. We used fat free sour cream and it added a surprising depth of flavor without the extra calories and fat. The sour cream and fresh green onions really put this simple recipe over the top!

Slow Cooker London Broil

The second time I made this, I didn't have the onion soup mix, so I just threw in some dried minced onion. It was even better than the first time, less salty!!! I added cooked egg noodles to the crock pot half an hour before serving. This is a fantastic weeknight meal with almost no effort!

Buttery Corn Bread

This cornbread was moist and delicious. It had more of a cake texture than a "cornbread" texture. I did not mix the wet and dry ingredients separately and that might have changed the texture somewhat. I just threw all the ingredients into the bowl of my stand mixture, mixed up the batter, and then poured into a 12" cast iron skillet. This will be my "go to" cornbread recipe from now on.

Best Chocolate Chip Cookies
