Brooke's Best Bombshell Brownies

These are very fudgy, chewy and delicious, not at all cakey. I put mine in a 9x9 pan which meant I had to up the cooking time by quite a bit.

Melt - In - Your - Mouth Shortbread

I even messed up and melted the butter rather than just soften it and these turned out perfectly. I made Valentine's day shaped out of them, the letters of my mans name and some hearts. Fabulous.

I love this recipe, and have been making it for years (with a few changes). Frozen spinach makes a great bottom layer and cottage cheese without the egg and Parmesan works perfectly. This recipe is a great way to use up your left over spaghetti sauce. (I often make a double or triple batch of this lasagna, cook it and then freeze it for another time.)

Baked Kale Chips

I've made these twice now, both times were a hit (hubby, friends, even my pickiest eater of a friend loved them). Coworkers say they cook theirs at a lower temperature and for longer but this works just fine. Definitely a recipe worth keeping.

Fresh Asparagus Soup

There are so many dimensions to this soup! It's the perfect consistency and the taste is phenomenal! We used 2% milk instead of soy milk. I'm not sure how people are finding this soup stringy?...the asparagus is pureed which means those 'strings' are ground up in the food processor. The recipe is perfect as is, don't change a thing.

Chicken Enchiladas IV

Loved these! We've made two Enchiladas recipes from this site, these ones and Enchiladas II. I prefer these ones, the boyfriend prefers the other ones. Either way a fantastic week night meal.

Florentine Artichoke Dip

Awesome! Added 1/3 cup sour cream to the mix and omitted the lemon juice as others suggested. I put the marinated artichoke hearts (drained), the garlic and the spinach in a food processor before adding it to the mix. It was AMAZING. As a heads up make sure you drain the artichoke hearts, if you add the liquid they are packed in the the dip it will be too salty. I served it with pita bread and raw veggies. What a hit! I will definitely make this again and again and again.

Black Bean and Salsa Soup

Simple and delicious and healthy!!! I followed the recipe exactly and loved it! This is definitely one my new favourite quick week night meals. If you leave out the broth/water it's a great meat substitute filling for tortillas too.
