Best Ever Muffins

I only gave these muffins 4 stars because they had a very sugary taste to them and reminded me more of cakes than muffins. Delicious never the less, but not muffins.

Acorn Squash

Fiesta Stuffed Peppers

Really liked this recipe. I adjusted the recipe a little by adding 1 carrot and 1 onion ground up in the food processor to the beef mixture. We couldn't taste them at all but it increased the number of vegetable servings in this meal. I also added a little bit of taco seasoning. The next time i make this I will skip the egg. Definitely a hit around the table, we will make this again, often.

Cinnamon Pork Tenderloin

This was good. I prefer my pork tenderloin a little more savory than this but the meat was tender, and the sauce was great. There were no complaints at the table.

Quick Italian Vegetable Soup

Turkey Meatballs

I found a very similar recipe to this in a cook book I own so decided to go and make this recipe. It was awful! The meatballs were fine, standard turkey meatballs without any flavour (though the bran flakes were a good idea) but the sauce was inedible! I had never had grape jelly before and apparently I don't like it, at all. We ended up just eating dry meatballs with rice and veggies. A disappointing meal to say the least.

Mashed Sweet Potatoes

I essentially made this but with a slight twist. I boiled 2 sweet potatoes and 1 carrot then mashed them together with 1/4 milk, 2 tbsp of honey and 1 tbsp of margarine. It was delicious! I will definitely make it again. On a side note I've also made this with a crisp. To do that put the finished mash into a casserole dish. In a separate bowl combine 1 tbsp melted butter, 1/2 crushed bran flakes and 1/4 cup pecans and 2 tbsp of brown sugar. Mix well and sprinkle on top of squash mash. Broil it in oven until crisp is lightly browned. Serve. Delicious!

Florentine Artichoke Dip

Awesome! Added 1/3 cup sour cream to the mix and omitted the lemon juice as others suggested. I put the marinated artichoke hearts (drained), the garlic and the spinach in a food processor before adding it to the mix. It was AMAZING. As a heads up make sure you drain the artichoke hearts, if you add the liquid they are packed in the the dip it will be too salty. I served it with pita bread and raw veggies. What a hit! I will definitely make this again and again and again.

Apple Crisp II

This was perfect. I followed the recipe except for a couple minor changes first i added a LOT more cinnamon to the apple mixture (3-4 tbsp) and i tossed the apples in the sugar mixture rather than just sprinkling it on top. It turned out perfectly. I will definitely make this again

Strawberry Spinach Salad I

I served this at a dinner party and it was great! I took the advice of some of the reviewers and made the dressing in advance so the flavours would mix but did not put it on until the absolute last minute so the spinach wouldn't wilt. I only ended up needing 1/2 the dressing but i am keeping the other 1/2 of the dressing for another salad some weeknight this week. We all really liked it, i look forward to making this again with some of the variations suggested like oranges or berries instead of strawberries. And chicken or bacon to make it a full meal. mmmmmm

Chicken Enchiladas IV

Loved these! We've made two Enchiladas recipes from this site, these ones and Enchiladas II. I prefer these ones, the boyfriend prefers the other ones. Either way a fantastic week night meal.

Linda's Lasagna

I love this recipe, and have been making it for years (with a few changes). Frozen spinach makes a great bottom layer and cottage cheese without the egg and Parmesan works perfectly. This recipe is a great way to use up your left over spaghetti sauce. (I often make a double or triple batch of this lasagna, cook it and then freeze it for another time.)

Bacon & Eggs Spaghetti

5 stars when made with a few variations. 1. skip the cheese. 2.toss in cubed cooked chicken and mushrooms 3. pepper MAKES this meal add a LOT. 4. Add a generous dollop of milk when you toss in the eggs for a creamier sauce. We always serve it with a salad and prefer fettuccine noodles but any kind of noddle works well. This is comfort food at it's best.

Black Bean and Salsa Soup

Simple and delicious and healthy!!! I followed the recipe exactly and loved it! This is definitely one my new favourite quick week night meals. If you leave out the broth/water it's a great meat substitute filling for tortillas too.
