Retired from the gourmet food business, I now do consulting work for start-up and established food companies that want to start or expand their brand. I blog about food and cooking.
My favorite things to cook
I love to cook almost anything. I love to take on special cooking "challenges" like making sausage or cooking a 15lb fish in a salt dome.
My favorite family cooking traditions
Cooking Thanksgiving at with my family. All doing something in my brothers tiny kitchen. Something memorable always happens. Last year my brother was taking his turkey out of the smoker and tripped over one of the dogs and the turkey went flying and every dog around went running. Thank Goodness there was a back-up bird!
My cooking triumphs
Making my first batch of homemade sausage and my first real traditional Spanish Paella.
My cooking tragedies
I've had my fair share through the years, but my first attempt at making crawfish bisque with stuffed heads was one that I will never forget. I had never dealt with live crawfish and bought a sack (30lb) of live crawfish, put them in my tub (I lived in a one bedroom apartment) and didn't know what to do with them. I went to the store to buy salt to purge them and when I returned the crawfish had escaped and were everywhere! Once I got them all corralled again, I spent the night boiling crawfish in my little pot. It literally took all night.
