Garlic-Buttered Green Beans

Reviewed: Nov. 26, 2007
Super! Changes I made: Added more mushrooms, used a 1/2 lb container (I think this close to 2 cups sliced). Used fresh garlic (2 cloves), or 1 to 2 tsp of prepared minced garlic from jar. Sauteed this with the butter and mushrooms. Added fresh grated parmesan to the top. This was the only thing completely gone from the Thanksgiving menu.

Easy Sausage Stuffing

Reviewed: Nov. 26, 2007
The great part is that this is really quick and easy to make. Way better than any prepared stuffing you can buy at the grocery store, and just as easy to prepare.

Yummy Sweet Potato Casserole

Reviewed: Nov. 26, 2007
This was really good. Even those that don't normally eat sweet potatoes ate this. I made earlier in the day, stored in the fridge and then popped in the oven when I was ready. Had to cook about 10 minutes longer since it was starting from cold but came out great!

Chocolate Banana Bread Pudding

Reviewed: Jul. 1, 2007
I thought this was below average... and cooked as directed just plain bad. It takes way more than 1 hour. Consistency is bad, taste is just OK, not worth the calories.

Amy's Barbecue Chicken Salad

Reviewed: May 26, 2007
Wow - really good. I marinated the chicken in Ken's Caesar Dressing for about 4 hours before grilling, discard the extra marinade. I also substitued tortilla chips for the fried onions and left out the cilantro (don't like it). Honey Barbeque sauce makes it a bit sweet, yum.

Heavenly Angel Food Cake

Reviewed: Apr. 11, 2007
My husband and guests raved about how this was the absolute best angel food cake they've ever had. It was easy and very light and fluffy. I thought Angel cake alone was a bit dull, so I added a chocolate pudding/whip topping frosting. Was even better that way - but is super good as written. This one can't go wrong.

Wild Rice Chowder

Excellent and so easy. No changes needed, reminds me of the chicken and wild rice soup at Panera.

Home Style Macaroni and Cheese

Reviewed: Feb. 1, 2007
It is a good base recipe, but I think a few changes are needed. First, there is way too much sauce. I used a full pound of pasta and there was plenty of sauce. also - you'd better find 6 extremely hungry people to eat it all, make a lot!! I agree with the other reviewers that the cream cheese is too bland a flavor. I "fixed" that the second time I made it by using a very sharp cheddar, and also replace 1/2 the cream cheese with velveeta. I also decided that I didn't need the bread crumb topping and just sprinkled parmesan on top as the coating. With these change - much better, about a 4.5 rating.

Fettuccine Alfredo V

Reviewed: Jan. 31, 2007
I thought this was excellent and so easy to make. I added a little pepper (about 2 tsps)and cut down on the dried parsley (since it is such a strong taste). Be sure to cook the pasta first (at least most of the way) because this sauce comes together fast!! Have all ingredients ready to go because you need to be stirring, not measuring. Also - I thought this was enough sauce for a full pound of pasta.

Chocolate Cornstarch Pudding

Reviewed: Jan. 30, 2007
So much better than instant, you can't even compare. Next time I will try with evaporated milk to make even creamier. I liked this better when it was first made and hot, but that is just the way I remember it as a kid. I pour a little cold milk on the top before eating, don't know why - that's just how we did it. Super easy!

Spanakopita (Greek Spinach Pie)

Reviewed: Jan. 29, 2007
This was pretty good, but it was too much spinach. I used a 10 oz bag of spinach (which was already way less then called for). Based on previous reviewers comments, I used 2 T of olive oil (vs. 3) to cook onions/spinach to keep it from becoming too wet. I used melted better instead of olive oil on the phyllo dough, and laid it out in a 9 by 13 pan. It took about 5 oz of dough, could go with 8 oz if you like the bottom and top thicker. Alternate the phyllo to make it overlap the pan. Making this way it turned out to be about 12 good size pieces. Next time, I'll double the feta cheese, ricotta, egg mixture and add more garlic. With these changes, I think this will become a 5 star recipe.

Baklava

Reviewed: Jan. 28, 2007
These are great...some things to note...Don't eat them while they are hot, be patient and wait until the next day to eat them. They are so much better. To cut them without hurting your baking pan, try using a plastic pizza cutter. Cut them first, then butter the top layer (to keep the top from sliding off). Cut the dough slightly smaller than the pan (this way it won't pile up and get dry around the edges). I made half a recipe in a 8 by 8 pan and it worked out great. I got 18 pieces out of a half recipe. Don't be afraid to try it, it is actually pretty quick to put together.

Easy Cream Cheese Danish

Reviewed: Jan. 28, 2007
Wow - this was really fantastic. I took the advice of the previous reviewers and cut both the filling and the drizzle in half. I added a little extra milk and a splash of vanilla to the icing because I wanted more of glaze than a drizzled icing. I used low fat cream cheese and it was decadent, I don't think you'll miss the extra fat. A single can of crescent rolls is a perfect fit to an 8 by 8 square pan (just make 1/4 of the filing and icing from the recipe). I had to work out extra long today because of these!

Quick Biscuits

Reviewed: Jan. 26, 2007
Extremely easy and taste good, I think it would be a bit better with some butter basted on or some cheese baked in... but these are amazing considering it takes 15 minutes to make (including the baking).

Cannoli

Reviewed: Jan. 20, 2007
I found the consistency of this to be really off from what I am used to from a italian pastry shop. I'll stick with buying these as a treat when I find them in a good bakery.

Superb Sausage Casserole

Reviewed: Jan. 17, 2007
4 stars for ease of preparation. I used italian hot sausage. This comes out really soupy - so I served over rice. A little bland on the spices, I will try adding more spices (maybe some garlic and cayenne pepper) the next time I make this.

Big Soft Ginger Cookies

Reviewed: Jan. 17, 2007
Very very good, I like the way they stay soft. It is easier to work with the dough if your hands are damp or you refrigerate for a few minutes before rolling into balls. I ended up with 28 enormous cookies. I think the taste is improved if you let them cool completely before eating (be patient).

Lemon Chicken Tenders

Reviewed: Jan. 14, 2007
Not horrible, but tastes like I poured lemonade on top of chicken. It was sooo sweet, and I only put in half of the sugar that the recipe called for. The curry was a bit too much as well. I won't make this one again.
