Dan's Old Fashioned White Bread

Reviewed: Dec. 7, 2014
I was doubtful that this bread would turn out ok as I baked it and I was right. The teaspoon of yeast, I thought was not enough. However, I made the recipe as written assuming that sugar/honey would help the yeast to work better. It didn't. After 90 minutes into the second rise, the bread barely rose. At 2 hours, the bread reached the rim. It didn't have much oven spring. Also, it was too sweet for a white bread. It think this dough is better suited to cinnamon bread/rolls. I'm giving it 3 stars. However, I will try to make it again. Other factors may have been at play - mainly the cold weather. I will update the review then.

Grandma VanDoren's White Bread

Reviewed: Jun. 29, 2014
I'm sure this recipe deserves more than 3 stars but the bread I made was just ok. I think my mistake was in using rapid rise yeast (dough cycle) instead of active dry which I didn't have. The Fleischmann's website said it could be used instead. The bread had a nice flavor, but didn't rise well. I will make this again this week and update my rating. With so many positive reviews, it has to be novice baker error. UPDATE: 2 WEEKS LATER - So I finally got over my failure with this recipe and decided to make it again. This time, I used SAF active dry yeast and King Arthur's bread flour. I knew this loaf would be different when the sponge doubled in less than 1 hour. The bread wasw absolutely delicious. My husband and I made turkey and provolone sandwiches with the warm bread. The texture was perfect. We just had the remaining half with scrambled eggs for breakfast. The entire loaf barely lasted 12 hours. Definitely five star.

Honey Oatmeal Bread II

Reviewed: Jun. 11, 2014
This recipe is definitely a keeper. I adjusted the servings for one loaf and followed the advice of a reviewer to let the oatmeal soak for the whole hour. My dough did not turn out wet and sticky. The only issue was that it rose a little lopsided, but that was probably because I put in my warm oven. Because the floor is even my baked goods tend to follow the dip in the floor. No matter, the bread was delicious - warm, soft, slightly sweet. My white bread fanatic husband inhaled half the loaf.

Ron's Bread Machine White

Reviewed: Jun. 7, 2014
This was the 4 loaf I've made with my new bread machine. It was delicious. I didn't change anything. I was worried that it would dry out because my husband couldn't wait more than 10 minutes to dig in. However, entire loaf was gone in 20 minutes. We enjoyed it with Haitian style cinnamon oatmeal. Will definitely be my white bread of choice.

Cuban-Style Yellow Rice

Reviewed: Jun. 3, 2014
I have not tried this recipe, but having lived in Miami and eaten and cooked delicious Cuban food for over 25 years, I understand the "bland" reviews. First the water to rice ratio is too much. Try cutting down to 1 1/2 cups of water for each cup of rice. Secondly, because the spice and onion were not made into a sofrito (sauted in a little oil with diced garlic (not included in this recipe) the flavor of the spices is diluted in the water. The sofrito - onion, garlic, red or green bell pepper should be sauteed in the oil before the annato is added. When I make Cuban style yellow rice, I also add a bay leaf to the sofrito. After the veggies have softened, I add the rice to the mixture, stirring for about 2 minutes. That allows it to absorb the flavors of the spices and the yellow color from the annato. Finally, add the water, bring to boil, then lower heat and simmer for 15 - 20 minutes. Take out the bay leaf. Then add the sweet peas at the end. Stir rice before serving. Hope this helps. If I make this rice within the next week, I will post my recipe and pic.

Best Bread Machine Bread

Reviewed: Jun. 2, 2014
Day 2 of owning my bread machine, and I have already made two loaves - this being the 2nd. It probably doesn't sound like a lot except my husband is out of town and the first loaf (honey wheat) was consumed by me and my 2 year old. This white bread was delicious - soft inside, flaky crust just as described. It rose so high, it hit the top of my bread machine and could barely fit in my progressive bread box. My son ate a slice even before was a fully cooled and asked for 2 more slices before he went to bed. I will definitely make this bread again. Now I question why it took me so long to get a bread machine. Thanks, SheCooks2

Honey Whole Wheat Bread

Reviewed: Jun. 1, 2014
I decided to buy a bread machine after several disappointing purchases from my neighbourhood bakeries. The last loaf I bought cost $3.00 and was as hard as a rock. I couldn't even use a slice as a frisbee; it was too heavy. What made it worse was that the lady assured me the bread was baked that day. I received my Hamilton Beach bread machine last night and couldn't wait to try this recipe. This was my first time baking bread - ever. I took the advice of other users and increased the salt and honey. It was hard to wait 15 minutes to cool the bread down. The smell was enticing. It is delicious - soft, warm, light, mmmmmm. My two year old son was adamant that he was not hungry, yet ate 2 slices. He even rejected eggs - his favorite breakfast food so he could have "more bread please, mommy." I cannot wait to make this again when my husband comes home. I believe this bread will make a whole wheat convert out of him. Next time, I will try the dough setting and bake it in a traditional loaf pan. Thanks, Kathy. Update: I baked this bread for my husband when he got back from his trip last night. He told me not to feel bad if he didn't like it because he doesn't like wheat bread. Needless to say, he ate his words and 3/4 of the loaf.

Juicy Roasted Chicken

Reviewed: May 6, 2014
The description fits this recipe perfectly. I also don't like when people rate a recipe after they have made multiple changes, but I have to admit that I did one thing differently. I washed the cavity and outside of the chicken with one lime before seasoning the bird with the ingredients listed. I'm Haitian and we don't cook any meat, especially poultry without washing it either lime/lemon/vinegar. It was delicious!
