Yellow Squash Casserole

Love it! I cook the squash longer than 5 minutes because that is my personal taste. I also add less milk to create a more solid casserole. The taste is great! This is my new squash casserole recipe!!

Mexican Bean Salad

Lemon Zucchini Muffins

These muffins are very good!! When a muffin is still moist the next day and tastes just as good as when it came out of the oven, then that is a good muffin. I am now looking to take that base recipe and create a blueberry muffin.

Veggie-Bean Brunch Casserole

Very good and hearty dish!! I followed others tips and here's what I did. I doubled the recipe . Used just 1/4 cup of oil, one can of pinto beans and 12oz package of frozen lima beans, added one package of chili seasoning, doubled everything else except the eggs and omitted the butter altogether. I scrambled 4 eggs and poured over the dish. spread cheddar cheese across the top and baked for approx. 30 min. The eggs and cheese made a nice topping. Will definitely make again!!

Roasted Brussels Sprouts

Tastes great and easy too. I added fresh garlic and mushrooms (cut in half) to the bag. Mixed well and baked. When I read that the brussel sprouts could be a snack to munch on, I thought what a crazy idea. Now I understand. It is really easy to just pop them in your mouth and chew. Thanks for the recipe.

Best Black Beans

These beans are great and so simple to make. The directions don't say how much water or how long to cook, so I guessed. I added about 2 - 3 cups of water. Boiled on high for 10 minutes and simmered on low for about 20 minutes. Added the spices and that was it! I had to stop myself from eating all of the beans at one meal! This will be a regular dis for me.

Basic Flaky Pie Crust

Update! After doing more research I learned a few more tricks to make the crust flaky. Cut the stick of butter into small pieces before blending into the flour mixture. Blend as quickly as possible so that the mixture stays cold. Follow the directions as usual. When ready roll out between two sheets of parchment paper - less mess and no more additional flour. Put it into pan and refrigerate til ready to use. Another step to keep it cold. I followed these steps and used the crust for peach cobbler and a pot pie. I could see the layers in the crust and the taste is great! I used cold butter instead of shortening, added 4 tablespoons of ice water and tossed with the fork until everything was sticking together. I then wrapped the dough in plastic and put in the freezer for 45 min. Used about 1/2 flour to roll out the dough. This was top and bottom crust for peach cobbler and it was great!

I'm a southern girl and I took a risk and made this dish in lieu of sweet potatoes. It was fantastic! I made no changes and my family ate every bit of it. It is now a requested dish!

Health Nut Blueberry Muffins

Healthy, tasty, and very moist .... I omitted the bran and wheat germ b/c I didn't have on hand but I doubled the oats. I only use soymilk so to get that "buttermilk" quality I just added one tablespoon of vinegar to curdle the milk. Everything else remained the same. I will make again and freeze some for a later date.

Herbed Potato Soup

Great tasting, quick and easy to make. I followed others and cooked the potatoes in broth (vegetarian), used oregano in place of rosemary, and added celery (a stalk). I will make this many more times.

Cornbread Muffins I

This was very good. Using tips from other reviews I cut the sugar in half and only used 2 tablespoons of honey. I doubled the milk because I didn't add the corn. I baked it in a 9x9 pan. It was dense yet soft and very good tasting. This will be a regular recipe for me.

Roasted Garlic Cauliflower

Loved it! Cauliflower is not my favorite veggie, but I will eat it more often with this recipe. I took this dish to Thanksgiving dinner and the pan was emptied. I modifed the amount of oil (watching my calories)and increased the garlic. It tastes great!
