Feels Good to be Back

It's been four months since my last post and I must admit I have been out of touch. It's been a very busy few months and the craziness is still not over for quite a bit. As you guys know, I got a pug puppy for Christmas and he is now 7-MONTHS!! (training & teething) I don't even know where the time went! I also just made 7-months at my new job and that's been going very well. I would've never thought I could get the knack for numbers but here I am. My birthday was 2 weeks ago. I am now 24 years old and ENGAGED! Jose and I decided that this is what we want, to be married to one another for the rest of our lives. We will be going through the motions of going down to city hall, telling our friends and families, and hopefully planning a dinner party for our loved ones to celebrate with us. Moving to another place is also in our plans. School will be starting for the both of us in the Fall so we are getting the paperwork and the finances ready for that as well. I told you, CRAZINESS!

I can't complain though. The excitement of moving, getting back into school, having a great job, and getting married has definitely been showing. I have been nothing but positive! I met Jose five years ago and thinking back to us sitting next to one another in class (he was very shy & I was very extroverted lol) I would've never thought this was going to actually happen. We were more focused on learning the ins and outs of each other and enjoying our time together. Here we are, about to make a big step towards our future together and I cant think of anyone I would rather take this step with. I have been lucky to find someone who knows and accepts me the way this man has. One word to describe him - best friend. If you look up the definition to this word it is simply 'the one who is closest to you.' There isn't a person in this world I'd have closer to me than him. I love you Jose and look forward to continuing this journey along side you. Hope you're ready!

About Me
I love food! But I think that will become pretty obvious to many of you. I'll try almost ANY recipe and will most likely modify it according to my palate as I go. Eating is an adventure and I crave new experiences.
My favorite things to cook
Italian has become the "go to" food for me. I believe it is the easiest and very yummy. But... I am gonna have to go with Indian cuisine. The different levels of flavors within this type of cuisine is extraordinary. I hope to be able to cook Indian food at home and have it taste as good as the local spots.
My favorite family cooking traditions
Thanksgiving. I love ALL of the things that be brought to the table. I transitioned from a traditional turkey to a honey glazed Virginia ham and I have never gone back. I am trying to have a thanksgiving pot luck at my new apartment so that we can all enjoy different styles of food.
My cooking triumphs
I roasted a whole chicken! AND DIDN'T UNDER/OVER COOK IT. Every new creation in the kitchen is a triumph for me.
My cooking tragedies
I over cooked some pork chops because I got caught up on an episode of Pioneer Woman. It was disastrous. Good thing we keep the take out pile nearby and ready.
