Chicken Cordon Bleu I

Reviewed: Feb. 3, 2015
My wife loved it. I loved it. Heck even my picky vegetarian sister (who occasionally eats white meat) loved it. Its awesome. Stop reading reviews and make this. Right now. On a more serious note... I had to use Panko crumbs as I did not have regular bread crumbs and I put more than one stinking slice of ham on it. (one is never enough!!) Thanks for this recipe. I am going to tell everyone about it.

Slow Cooker Baby Back Ribs

Reviewed: Dec. 24, 2014
Fall off the bone, fantastic! My dad loved them despite being a smoker (person who smokes meat the "right way"). I did it exactly as written twice then took a more adventurous route by subbing water for beer. I like the way beer cooks so to me it improved on perfection. BBQ sauced used for all trials was Kraft Honey BBQ (apparently it is the #1 best selling BBQ sauce (do not quote me on that))!

Easy Egg Drop Soup

Reviewed: Dec. 21, 2014
Wife loved it and she is a egg drop soup "snob". Made 2 additions ( couldn't help it), 1/2 teaspoon ground ginger and 1/2 Tablespoon Sesame seed oil. Simple and FAST!

Spinach Stuffed Chicken Breasts

Reviewed: Aug. 8, 2014
Very good stuffing but the chicken came out rather bland and the 1 hour cooking time seemed a little excessive. The next time I made it, I marinaded the chicken breasts in a simple EVOO, Lemon juice, oregano, and garlic marinade then cranked the oven up to 425 and let the chicken cook for about 25 minutes. It was perfect. This filling gives me many great ideas!

Chicken Souvlaki with Tzatziki Sauce

Reviewed: Jul. 30, 2014
Made this last night per the recipe and found it to be excellent. The tzatziki sauce was the only thing i felt lacked something. Being french Cajun I added chile powder to give it some zip but upon reflection I think a teaspoon or 2 of dill would have been a better choice. But my fiance and I liked it alot!

Potato and Cheddar Soup

Reviewed: Jul. 2, 2014
This was an awesome soup. Upon completion I felt it needed more cheese and some kind of green spice so I added an extra cup of cheddar and 1 tablespoon of oregano. All my fiancee complained about was that i didn't make enough!

Italian BBQ Pork Chops

Reviewed: Jul. 2, 2014
I like balsamic vinegar but this simply had too much. I recommend halving the vinegar.

Pesto Chicken

Reviewed: Jul. 2, 2014
I only subbed the prosciutto for thin sliced bacon (my local grocery store doesn't have a notable deli) and I used a store bought Pesto that contained romano cheese and basil. This was awesome! My fiancee demanded that I make this at least once a week! I may try and stuff the chicken with pesto or ham or cheese just to add a little more complexity to a brilliantly simple and tasty dish!

Restaurant-Style Chicken Scampi

Reviewed: Jun. 3, 2014
4 stars because there is either not enough sauce or too much noodle, however it works out it left the dish with only subtle hints of taste and alot of starch.

Slow Cooker Chicken and Dumplings

Reviewed: May 22, 2014
My fiance and I really enjoyed this recipe. I made some changes but to be fair i did taste it beforehand and it was good. I wanted a more creamy texture so i used up some heavy cream (1/2 cup) and instead of water i used chicken broth! It is good both ways though!

Blackened Tilapia with Secret Hobo Spices

Reviewed: May 19, 2014
I really enjoyed this recipe but my fiance did not. It was just too spicy for her. Next time I will cut down on all of the hot spices, perhaps 2 TBLS Paprika, 1/2 TSP Cayenne, black, and white pepper. I think this will tone it down and not sacrifice flavor

Chicken Milano

Reviewed: May 19, 2014
My fiance and I loved it! Followed the recipe to the "T" and I would like to make some recommendations: use the best sun-dried tomatoes you can find (mine had a strange tangy flavor that eventually cooked out)and make double the sauce if using garlic bread (it deliciously mops up the leftovers!)

Broiled Tilapia Parmesan

Reviewed: May 8, 2014
My fiance loves this dish. I am pretty sure she is marrying me for the tilapia! I make this once a week now, on what is now dubbed Tilapia Tuesdays. The Parmesan sauce is just awesome. I normally double this recipe.

Prosciutto Wrapped Asparagus

Reviewed: May 8, 2014
Since my little grocery store does not carry prosciutto very often I had to substitute with thinly sliced bacon. My family will not let me come to a function with out this dish! I now make quadruple batches just to satisfy their appetite!

Slow Cooker Cilantro Lime Chicken

Reviewed: May 8, 2014
I did the optional 8 hours in my slow cooker and was terribly disappointed in the results. I will try this again but next time I will only let cook for the recommended 4 hours. It just came out bland with a hint of overcooked citrus. Served it with flour tortillas and sour cream.

Feta Cheese and Bacon Stuffed Breasts

Reviewed: May 8, 2014
I made this last night and it was really good. I didn't have Feta so I used provolone and it worked well. As others have said, the chicken is a little bland. Next time I will make twice as much "sauce" and marinate it then wrap it in bacon. Otherwise, it was very good!

Sticky Chicken Strips

Reviewed: Apr. 30, 2014
I made this with only one substitution... I used one cup sugar instead of Splenda. Sauce was good but very thin. Chicken was good but not coated well. Next time I will try reducing the sauce BEFORE I coat and bake the chicken.

Homemade Wonton Soup

Reviewed: Oct. 3, 2013
Awesome recipe! My friends and family think I'm some kind of culinary Guru because of this recipe! I didn't put mushrooms (girlfriend hates them) and no shrimp (I'm allergic) other than that I only changed the ground pepper to course ground. I have made this five or six times and only have one piece of advise. Get help wrapping the won tons. It takes forever to do a double batch when it's just you. Again awesome recipe!
