Lactation Cookies

These are yummy and an almost healthy take on cookies. I tweaked it a bit as per suggestions from other reviewers. I used half butter and half coconut oil and used whole eggs rather than separating. Helped boost my milk supply a bit but mostly a good excuse to eat cookies :). Will make again for myself and for friends who are breastfeeding.

Bagels II

We love this recipe! I made them and put them in a bag in the fridge, it took us about 2 weeks to eat them all and the last ones were still good and soft. Much better than the recipe I had been using before.

Banana Blueberry Muffins

Just took these out of the oven, had one, then had to have another because it was so good! I did however make some modifications based on what other reviewers, I used 3 eggs (with yolks) rather than the 4 egg whites, did half white and half brown flour, and sprinkled with sugar and cinnamon before baking, I also used frozen blueberries (because it is March and fresh ones I can get at the store aren't really that fresh). They turned out great! I think next time I will try with all whole wheat flour just because I think they would have been good like that in hindsight. Was shocked how good they were without any oil or butter. Only complaint, which was my own doing (not following the recipe again) I put paper liners in my muffin tins and they stuck really bad to the papers. Otherwise great, healthy muffins, were fun to make with the kids and my 4 year old daughter loved them (my son is 2 and stubborn and won't try them yet). Overall great recipe that I will make again!

Beef Pot Roast

I made this tonight, my first pot roast and it was really good! I did as a lot of reviewers suggested and didn't change the recipe except for replacing the bay leaf with some Italian seasoning and parsley (because my husband doesn't like bay leaves). It was so good for a chuck roast and I just took the pan right out of the oven took the roast out to rest and heated up the juice/onions/garlic till it was boiling and added some flour water to make a gravy. Very good, I'll be making this again :).
