Easy Oatmeal Muffins

Great muffin! This is the perfect base recipe to play with, or just leave as is. I also found the cooking time to be too long and took them out of the oven at 15 minutes and they were perfect - nice and moist. I also added cinnamon and vanilla as another reviewer did, and also used brown sugar and 1/2 whole wheat flour. I decided to add mini chocolate chips to the second batch and they are YUMMY. The plain ones will be great with coffee for breakfast, and the chocolate ones as an afternoon treat. This one's a keeper for me!

Cookie Press Shortbread

Delicious and so easy! Perfect holiday recipe to do with young kids because there aren't too many ingredients. They just came out of the oven and are melt in your mouth. This one is definitely going to be a Christmas regular.

Laura's Quick Slow Cooker Turkey Chili

This was fantastic! I doubled the recipe for a Super Bowl party and served with corn bread, sour cream and shredded cheese. I used lean ground beef instead of turkey and sauteed the onions on low heat for about 10 minutes before adding them to the slow cooker - delicious!

Glazed Meatloaf I

Delicious! I HATED meatloaf as a kid but was feeling like I should give it another shot and I'm so glad I did - a definite winner. The only changes I made was using 3/4 cup italian flavored bread crumbs instead of the 3 slices bread, and eliminated the onions. I also put all the lemon juice in the sauce by accident, but it still turned out great and I may do it that way again next time! Thanks for a great recipe.

Dietetic Banana Nut Muffins

These were much better than I was expecting! Very moist and have great banana flavor - I made as is except I added a teaspoon of vanilla for flavor and I'm glad I did. I also used Splenda sugar blend instead of 100% Splenda and sprikled some chopped walnuts on top before baking. Yum!

Fish Tacos

Made these last night - so good! Definitely a favorite from this site. The market didn't have cod so I used snapper and it worked perfectly - also didn't have any capers in the house and I didn't miss them at all. Yummy!

Popovers

These are so easy and always come out soooooo good. I recommend greasing the custard cups generously with butter as it will make the popovers really pop and much easier to get out of the cup. My oven is really fickle and never keeps the right temperature, but these still always come out perfectly.

Rosemary Mashed Potatoes and Yams with Garlic and Parmesan

These were fantastic! My boyfriend hates yams, so I made them with only russet potatoes, and they turned out wonderfully. I'm not the biggest fan of mashed potatoes, but the rosemary and garlic flavor had me going back for seconds - this will be my only mashed potato recipe from now on.

Cooking Light magazine's Chicken Parmesan

This recipe has become a favorite. I've made it several times and it always comes out perfect. I recommend dipping the chicken twice (egg, bread cumbs, egg again, bread crumbs again) for a thicker, more flavorful coating. Yum!

Chicken Florentine Casserole

Wonderful!! I made this last night for just my boyfriend and me and it was perfect. I used fresh spinach instead of canned and didn't have any half and half, so I used whole milk instead and it came out great. I also left out the bacon bits as a personal prefrence and it wasn't missed - the sauce has great flavor already. I served it with warm chiabatta bread, but I think I'll try it with pasta next time because the sauce is so good. I definitely reccommend this for an easy week night dinner that tastes like something you'd get eating out. Thanks for a great recipe!

Oatmeal Banana Nut Bread

So yummy! I've made this twice now and I think I finally have it perfect. The first time I baked at 325 for 60 min and it cam out a bit dry - second time did 300 and it came out perfect. Also made a few other changes: used 1/2 cup margarine instead of shortening, used lt brown sugar instead of white, and added 1/2 tsp cinnamon as well as 1/2 c. chocolate chips. Also added the oatmeal/cinnamon/sugar topping suggested in another review and that added the perfect touch. This is a recipie I'll be using for a long long time - thanks!
