Easy Chocolate Tofu Pie

I thought this turned out incredible! I did not use the cider, but added coffee liquor instead. I didn't have a problem with the texture, but I made sure that I bought the Silken Tofu sold in a box. I bought the firm. I don't think I would ever make a chocolate pie any other way. Everyone who tried this loved it too and never would have guessed it was made with tofu.

Golden Pumpkin Rolls

These turned out so good. The recipe worked out perfectly for my Christmas dinner, but I would make these again any time of year. The pumpkin adds a delicate flavor and works perfectly for a roll. I will definitely make these again and again.

Seasoned Beans and Tomatoes

I followed the recipe exactly and found these to be too sweet for me. I was also expecting the tomato to add more flavor than they did. I don't think I will make these again.

Baked Pork Spring Rolls

I really liked these, but I think they will be even better as I use the recipe more. I couldn't find Spring Roll wrappers, so I used Wonton Wrappers. I also wasn't sure how full to fill them. Since I finally found Spring Roll wrappers, I will use those next time. The flavor was exceptional though and I found that they froze well.

Gingerbread Scones

I love scones, but I was a little disappointed with these. They aren't very sweet and seem very dry. I may try to make these again, but I think I'll stick to more traditional scone recipes.

Cranberry Pumpkin Muffins

I thought these turned out good. I used nutmeg, ginger, cinnamon, allspice and ground cloves in place of the pumpkin pie spice. (1 teaspoon of each except 1-1/2 teaspoons cinnamon and 1/2 teaspoon ground cloves.) I also used half the sugar as recommended by other reviewers and I used 1 cup all purpose flour with 1 cup oat bran flour and 1/4 cup wheat germ. I also substituted applesauce for the oil. These turned out great and not too sweet, but I wish they would have raised a little more. I was also a little concerned if I used too much spices, but it was still a delicate flavor. (I think the cranberries set the spices off well.) I would make these again.

Iced Pumpkin Cookies

I thought these turned out wonderful. A nice, not so sweet cookie perfect for fall and holidays. The cookie is sort of cake like and I followed other reviewers suggestion for not storing these in an air tight package so they wouldn't get mushy. I followed the recipe exactly and I wouldn't change a thing when I make these again.

Cheesy Ham and Asparagus Bake

Good (not great) brunch recipe. I also used fresh asparagus, but followed everything else exactly. For a casserole, it's actually a fairly healthy meal, but easy enough to make even lower fat.

Healthy and Delicious Cherry Pie

I enjoyed this recipe, but I would classify it more as a cross between a pie and a cobbler. While the crust makes the pie very healthy, it's not quite the same as a traditional pie crust in taste or texture. I would like to try this next time as small, individual pies.

Mock Tuna Salad

I love eating healthy so I gave this a try. I think the phrase "mock tuna" give the wrong impression since this tastes so different from tuna. I followed the recipe exactly and thought it came out a little dry. I have found I prefer other veggie sandwich options much more palatable.

I absolutely loved this recipe and I was thrilled how healthy this recipe is. I served these rolled up and topped with warm fruit like apples, pears or apricots. Sprinkle with a little cinnamon and it tastes wonderful!

Almond Chicken Salad

Very tasty and nutritious. It takes me a little longer than 30 minutes to make with all the chopping, but this recipe is well worth the effort. I followed the recipe exactly, but I think it would also be good using meat from a store bought rotisserie chicken.
