Indian Tomato Chicken

This dish was heavenly. It calls for whole, peeled tomatoes, crushed.......I used a can of crushed tomatoes that didn't say "whole", and followed the recipe exactly as posted. The consistency of the sauce was just wonderful, all of the spices were divine, and my whole family loved it, including my 2 1/2 year-old grandson who kept begging for more sauce! This will definitely go into our rotation!

Quick and Easy Chicken Noodle Soup

Very good soup, which will probably be even better tomorrow. As suggested, I cooked the noodles separately and added them at the end. Also as suggested, I added 2 cloves minced garlic which I sauteed with the onion, carrots and celery in butter and olive oil. After about 4 minutes, I threw the spices into the veggies and sauteed them all together. I didn't have vegetable broth, so I used only organic chicken broth, and added almost a tablesoon of Better Than Bouillon. I used leftover chicken that I had roasted last night, using both dark and white meat. My picky little 2-year-old grandson was running a fever last night, so I made this for his "medicine" tonight, and he lapped it right up. Yea! I'm giving this 5 stars for the ease of it along with the very satisfying taste of comfort food.

Red Lentil Curry

I made this last night and my whole family, including my 18-month old grandson, loved it. Beware.........it is very filling! I over ate to the point of discomfort after loading up a big soup mug, and eating it with a heavy rustic bread and a big salad. I did what was suggested by others........I doubled the garlic and sauteed the spices in a little oil, then added the ginger and garlic and sauteed for another minute before adding it all to the onions. Then I added the tomato puree and simmered it all together for awhile before adding the lentils. My house smelled extremely pungent all afternoon and evening..........and I teach piano full time in my home........haha!! I thought the consistency was just right after adding only about 1/2 cup of the water left in the saucepan from the cooked lentils. I would like to add that Allrecipes has changed my cooking life dramatically. I can find more ethnic dishes to try than ever before, and I make my final selections based on the reviews. This is such a low-risk and wonderful way to try new dishes, and the recipes are all in a FREE "cookbook" loaded with ratings and suggestions! I'm having a ball treating my family to the tasty results.

Soul Smothered Chicken

Veronica......your recipe was featured on AOL as part of a recipe collection for soul food. It just jumped out at me, as I could taste it in my mind, so I had to try it. This was sooooooooo delicious, and my whole family loved it, including my 19-month-old grandson, cayenne kick and all. Even though we mostly eat boneless, skinless chicken breasts, you'll be happy to know that I used bone-in, skin-on thighs, and it was perfect. After the frying step, I scraped up all the bits in the bottom of the pan, saved them, and threw them back in when I poured in the chicken stock. Thanks so much......this is a keeper and it will be served here often.
