Tuscan Soup

I love this soup, I used to have to go to Olive Garden every time I wanted this soup, now I make it at home all of the time. Sometimes I use kale instead of spinach, and I usually add some Oscar Meyer bacon bits. Also, I use spicy turkey italian sausage.

Easy Pork Roast

Delicious! I used a very lean pork roast and the meat just fell apart. Served it in bowls and it was kind of like a stew with the beans. Will make again!

Pretzel Turtles

I can't stop making these!!!!!!!! So easy & so good! I have used regular pretzels, butter pretzels, Dove caramels & cheap wal-mart caramel cups, all with great results. I like to sprinkle a small amount of coarse sea salt over the top while still warm because I love salted caramels. You can't go wrong!

Easy Morning Glory Muffins

Delicious muffins! I made a few slight changes. I was out of coconut but will definitely add it next time. I used 1/2c pumpkin & 1/2c applesauce instead of the oil. Added a few dried cranberries. Put the carrots & apples in the food processor. Healthy & full of flavor! I got 18 good sized muffins from this recipe.

Beef Potpie

I doubled this recipe and instead of using the broth/flour mixture, used the leftover roast beef gravy. I also added a can of diced potatoes. Awesome way to use those leftovers! Now I buy a bigger roast, just to make sure I have enough for this recipe!

Noodles Marmaduke

Good recipe. Very homey tasting, comfort food. Noodles didn't get quit cooked enough, I had to add some broth and extend the cooking time. It was actually better as leftovers. My husband gave it 5 stars. Will make again.

Mr. Kirk's Won Tons

These are amazing! My hubby & I made these together & had a lot of fun! They are time consuming, but recipe makes a lot of wontons. We had some trouble with folding which, thankfully, doesn't affect the taste! With only the two of us eating, we froze quite a few. They freeze & re-heat quite well. Can't imagine eating store bought ones anymore!

Mom's Chicken Cacciatore

Doubled the tomatoes & garlic, added carrots & celery to increase the veggie content, used boneless, skinless breasts & added fresh italian parsley & fresh basil at the end. Served over penne pasta. Husband LOVED it! Definitely a do over!!

Easy Curry Couscous

Sukhothai Pad Thai

I am very picky about my pad thai, so was hesitant to try this recipe. Only made a few changes. Could not find the dried radish, so left that out. Could only find tamarind paste, so used that. Used half lime juice, half rice vinegar. Used fish sauce & only added soy to taste. Cut down the sugar by a 3rd. Really enjoyed this! Better than most Thai restaurants! Will make this often!

Smoked Sausage and Zucchini Saute

I go to this recipe when I'm short on time. So quick & easy. I used a can of diced tomatoes & minced onion instead of dried. Sometimes I add yellow squash & serve with polenta.

Ham and Cheese Breakfast Quiche

Used sausage because that is what I had on hand and sauteed some onion with the sausage. Also used skim milk instead of cream & only 2 tbsp of butter. My husband usually hates breakfast bake type dishes & he raved about this one!!!

Quinoa Pilaf

I have really enjoyed getting to know quinoa. This recipe is good as is. The lemon juice is a must add! Made it once without & it was not nearly as good. I will add other veggies or even meats to make this a full one dish meal. My husband really doesn't care for this, but I make it a lot when he is working. It is good as leftovers & I take it to work for a healthy meal.

Loved this recipe! Didn't use shrimp but ahve made this with pork & chicken. Both very good. Have made it with rice noodles & actual pancit noodles. Good both ways. Very simple dish. I hae had pancit many times made by phillipino friends & this is pretty close. I do add a little bit of fish sauce for a more authentic flavor. This gets made frequently at our house.

Iowa Maid-Rites

Followed the recipe, but simmered for longer than stated. Had to add water as it simmered which seemed to be exactly what was needed. The added water kind of toned down the strong flavors. My husband & I are both Iowan's, born & raised, & this recipe brings home a little closer!

Skillet Pork Chops with Potatoes and Onion

I made this last night & my husband is still raving aboud it! I sauted my onions first in a tbsp of butter then removed from pan. Added onion powder, garlic powder and fresh ground pepper to the flour. Others have said this turned out oo salty. I used reduced sodium beef cubes and the salt called for and it was perfect! The Yukon Gold potatoes are perfect for this dish! We will make this often!
