Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

I stayed away from making baby backs at home because it seemed like too much work. WOW! Was I wrong! These turned out fabulous, fall off the bone delicious! The sauce is amazing! I doubled it the second time & we have used it on chicken, hamburgers & other grilled meats. We are no longer going out when we want good ribs!

Chili Rellenos Casserole

Chilis Rellenos are my husbands all-time favorite mexican food. In trying to help him lose some weight, we have stayed away from his favorite mexican restaurant. I used a 28oz can of Hatch's whole green chilis & used enchilada sauce instead of tomato. I also added an extra egg & cut the amount of cheese in half. My husband loved it!! I liked the flavors, not so much the textures. I will definitely make this for him again.

Coconut Ice Cream

Wow! Smooth, creamy, dreamy! Everything a homemade treat should be! Definitely not low fat or low calorie, but a small serving of this delectable treat goes a long way. I was able to find the cream of coconut in a lighter version at my local Wal-Mart in the mixers section. Didn't even know they made a lighter version! Noticed no difference in the flavor or consistency. This is my husbands all-time favorite dessert!

Plain and Simple Sourdough Bread

This was an incredibly easy recipe! I do believe that the quality of your finished product will really depend on the quality of your starter. I mixed it up on the dough cycle then made it into 12 good sized rolls & baked them til golden. Only problem is they are so much better than store bought that my husband wants them all the time!

Ham and Cheese Breakfast Quiche

Used sausage because that is what I had on hand and sauteed some onion with the sausage. Also used skim milk instead of cream & only 2 tbsp of butter. My husband usually hates breakfast bake type dishes & he raved about this one!!!

German Apple Pancake

Quinoa Pilaf

I have really enjoyed getting to know quinoa. This recipe is good as is. The lemon juice is a must add! Made it once without & it was not nearly as good. I will add other veggies or even meats to make this a full one dish meal. My husband really doesn't care for this, but I make it a lot when he is working. It is good as leftovers & I take it to work for a healthy meal.

Fajita Marinade I

We have been looking for a good fajita marinade for a long time. This one is right on! So easy too! First time we marinated chicken breasts & I saved out about 1/4 cup of the marinade for the peppers & onions. Marinated the chicken for about 6 hours then grilled them. Delicious! The second time me used the marinade on sirloin steak. Marinated for about 8 hours. Also delicious but we felt that the marinade gave the chicken a better flavor than the beef. This will be used often at our house!! Only changes, broth used instead of water & a full tsp. of cayenne.

Flax and Sunflower Seed Bread

Wow!! This recipe yields an incredible loaf of bread!! I haven't always been happy with the texture of bread machine breads. This loaf is the perfect texture. Great alone, or for sandwiches & even better toasted! My husband can't stop raving about it. As other reviewers, I used milled flax seed. Thanks Erna, for a fabulous loaf!!

French Bread

Followed recipe exactly and this is the BEST french bread!! Thanks to the reviewer who suggested ice cubes in the oven...GREAT idea!! These loaves came out golden brown with a beautiful somewhat chewy crust. Better than a bakery & takes very little time!

Jalapeno Chicken II

My husband, a man who rarely cooks, & even less often cooks something good, decided to surprise me with this dish. WOW! Not only was I treated to a delicious dish, but he is now getting more brave & trying to create new dishes. We have made it as written & we have made it substituting fresh Hatch chilies. Excellent both ways. If you like jalapeno poppers & grilled chicken, you can't go wrong with this recipe!

Serbian Ground Beef, Veggie, and Potato Bake

We loved this dish! Wasn't sure about the cinnamon/clove addition, but it is a great flavor in this dish. The only changes I made were to add 2 crushed cloves of garlic & to increase the liquid a bit. Otherwise as written. Nicely spicy. Next time I may uncover for the last half of cooking to brown the top a bit. My husband asked that we make it again soon! Thank you amanda!

Lemon Horseradish New Potatoes

Wow! These were surprisingly delicious! I'm not a big fan of horseradish, but my husband is. I made these for him, but I LOVED them. They had a zip to them from the lemon horseradish combo that really lit up an ordinary meal! Will be making these often!

Pineapple Bread Pudding

White Chocolate, Chocolate Cookies

These cookies turned out perfectly for me! I reduced flour by 1/4 cup, added tsp. vanilla & a bit of salt. Also 1/2 baking soda, 1/2 baking powder. Did 1/2 the cookies with white chips & the rest with peanut butter. They were perfectly soft, puffy, crispy at the edges. Thank you!

Orzo with Parmesan and Basil

Honey Roasted Red Potatoes

My husband absolutely loves these potatoes! I double the honey & add a bit more salt than called for. The last time I made these I just cut a sweet onion in big chunks also & cooked right with the potatoes. I really wasn't expecting to like these, but they have become a favorite!

Pancit

Loved this recipe! Didn't use shrimp but ahve made this with pork & chicken. Both very good. Have made it with rice noodles & actual pancit noodles. Good both ways. Very simple dish. I hae had pancit many times made by phillipino friends & this is pretty close. I do add a little bit of fish sauce for a more authentic flavor. This gets made frequently at our house.
