Sweet Dinner Rolls

Reviewed: Oct. 19, 2011
Best Dinner Rolls I EVER made! The last recipe I made came out like rocks from another popular website that suggested I did not have to let the bread rise. WRONG! The key here is letting the dough rise twice!I dont have a bread machine so here is what I did: Before allowing the dough to rise, I put a bit of coconut oil (1 tsp) in a bowl and rolled the dough around in the oil. I then set the oven for 170 (That is the lowest it goes) I took a damp kitchen towel and placed it over the bowl--to cover the dough. I then turned the oven off and placed a pyrex dish under the bowl (to prevent my bowl from melting) and placed it in the oven the first time for 45 min the first time. As a suggestion of another reviewer, I punched the dough a bit (No need to knead the dough) then let it rise again for another hour. This is the key to having the rolls to be light and fluffy. If you skip the rising part, this WILL NOT yield the same results. You wil end up wth bread rocks! They will be dense and gross in the middle. I know cause I tried it. I made these rolls, pulled them out of the oven and my family devoured them and asked me when I am making it again! Thanks for posting such an awesome recipe Donna! OOh! The recipe also called for 1/4 of a cup of butter. To save on calories, omitted this toplace on bthe top of the rolls and they still came out great. I will try to ake money bread out of these rolls or cinnamon rolls. Also reduced the amount of sugar by 2tb and it still came out great!

A Southern Fried Chicken

Reviewed: Jul. 16, 2011
This was a hit with the family. I never made fried chicken and this came out wonderful. I eliminated the three sauces the recipe called for. It just needed a bit more seasoning ( I guess if I added those three wet seasonings, the chiken would have been even better). Also, to fry chicken, the best thing is to let the oil heat up first or you'll end up with a soggy mess and oily chicken. I usually flick a small drop of water intot he pan to indicate how hot it is and if its ready for the chicken. The breading on the chicken came out crunchy and perfect!

Chocolate Chip Meringue Drops

Reviewed: May 25, 2010
Extremely easy to make and does not require major ingredients. These are usually staple ingredients in any home. This was the first time I made them and they came out great. I reduced the amount of sugar to 1/4 cup of splenda since I was adding sugar free chocolate chips.I omitted the cocoa powder cause it contains 3 carbs. Being on a low carb diet, these I will make more in the future ! Also, I did not follow the directions and put the meringues on a pyrex glass and a metal pan to see what would heppen. Well, they stuck to the pan! So, use the parchment paper or foil like the directions say! LOL. But despite it being a crumbled mess, it was still great!

Oat Bran Muffins

Reviewed: Nov. 3, 2011
These were really good muffins. I made some changes to the recipe. I used 1/2 tsp of salt rather than a whole since I am watching the sodium. Used 4 egg whites and a banana. Also used a cup of applesauce-- no oil. Used the 1/2 cup of light brown sugar but threw in some dark chocolate chips in one half of batter and extra golden raisins in the other. I prefer the raisins since it gives it a sweeter taste. Add cinnamon and a bit of pure vanilla and your muffins will be great! This will be great with pumpkin pie spice and pumpkin next time!

J.P.'s Big Daddy Biscuits

Reviewed: Aug. 6, 2010
Awesome recipe! Made a few changes: used carnation milk. Made it into buttermilk by souring the milk with white vinegar-2tablespoons of it. It will not make the biscuit sour! As I mixed all dry ingredients, I melted my butter and placed it in the dry mix.when adding my buttermilk, I used a little bit at a time.only to prevent the dough mix from being too wet. Once all ingredients were put together I did not overmix the ingredients to prevent the biscuits from being tough. I dusted a plate with flour and scooped out one tbs of dough in the mix and patted flour on the biscuitmix about 4 times . Twice on each side. I dusted the bottom of a Pyrex dish with flour and placed the biscuits in the dish- baking for 12 minutes. Do not be tempted to keep the biscuits in there any longer since it will harden once you take it out the oven. This recipe made 9 small biscuits. But my family loved them! Yummy!! Will make again!

The Best Rolled Sugar Cookies

Reviewed: Oct. 13, 2011
These cookies are great! I did two things that reviewers suggested that made these cookies perfect: #1- I made sure that when rolling out the dough, I used confectioners sugar. Seemed weird at first but makes sense so cookies don't taste like flour. #2-I sprayed the wax paper withPam spray, I baked the cookies for 8 minutes on wax paper and let them cool on a shelf for at least 15 minutes and the cookies will not fall apart. After making this I will never buy store bought cookies!!! Thanks Allrecipes!!!

Southern as You Can Get Collard Greens

Reviewed: Jul. 16, 2011
This recipe is ALL that!! I have never cooked collard green until today. My picky kids wanted seconds! Some small changes I made: Used packaged concentrated tubes of chicken broth, rather than the can. Used 1/2 smoked turkey leg for flavor, since we dont eat pork (If you use the whole leg, the smoked turkey might be overwhelming in taste). Put a Tablespoon of brown sugar with the vinegar. I think I will use 1/2 tablespoon of vinegar instead, cause it still had that vinegar taste (Thats the purpose of the brown sugar, to eliminate that taste). Oh man, this will be a favorite at te table. Especialy since my kids wil eat their veggies!

Pumpkin Cookies V

Reviewed: Dec. 14, 2010
This is a great recipe. My picky kids loved it, so I ill make this again. What I did was half the recipe since I only had one can of pumpkin. (I should have added an extra 1/2 cup of sugar to the mix since I halfed the recipe--I only used one cup). I added extra cinnamon, allspice and vanilla extract to the cookies and the icing and it came out great. But, the allspice makes a great difference in taste. YUMMY!

Chocolate Chocolate Chip Nut Muffins

Reviewed: Jun. 3, 2010
I willl never buy chocolate chip muffins again from the store! This recipe is too awesome! I made this for my family of five (three kids) which one of them are not crazy about chocolate. HE loved it! My husband asked me after the mufffins were gone, when I will make them again! ;-) Thanks for submitting a wonderful recipe. Also, I omitted the recipe and used mini chocolate chips. For some reason mines kept sinking to the bottom when using regular sized ones. But perhaps I am adding it at the wrong time. Either way, these muffins still came out great!

Glazed Cinnamon Biscuits

Reviewed: Aug. 27, 2009
This was a great recipe. Easy to make, most ingredients are simple and on hand. Best of all, it does not require a breadmaker if a person does not have one! The only reason why I did not give this five stars was because it should be in the oven a bit less than the time it states. I know it said 18-20 minutes or until it gets brown). Aside from that, these were very yummy. My family and I thank you! Some changes that I made: I used 6 tsp of butter rather than 4 to cut into the biscuits. I also added more cinnamon 2 tsp of cinnamon (we like lots of cinnamon). I added vanilla extract to the milk when mixing the wet and dry ingredients, I used 6 tbs of milk for the icing to stretch the icing (Did not have a cup of confectioners sugar.) In the icing I also added more cinnamon and vanilla. It came out awesome! I think I will add cream cheese to the icing next time.

Clone of a Cinnabon

Reviewed: Dec. 22, 2007
The key to this is using fast rising yeast.I used regualr yeast and it really di not rise as well. I let it rise for 30 minutes in a warm oven. I made sure to cover the bowl with a cloth so it can rise.(make sure the oven isnt too hot so your bowl wont melt! I do not have a bread machine. But I found this recipe to be easy without one. I also use a bit of melted butter after the rolls rise, I brush onto the rolls. Then I sprinkle a bit more of cinnamon on it. I also make sure when making the dough I put cinnamon in that too. If your a cinnamon lover, then add some of the cinnamon in the icing as well. It taste SOOO good. I am going to have to make another batch! This is still not a cinnabon, but it is a really good recipe. These rolls only last about two days or less. YUMMY!!

Boiled Bagels

Reviewed: Dec. 16, 2007
These bagels came out great. The ultimate test was seeing if my picky five year old would eat this. He ate them and loved them. The only thing different I would change about this recipe is to let the bagel dough rise more--maybe add an additional 15 minutes to this recipe. I did not rate this recipe as a five star only cause of the amount the recipe called for. Instead of me making 12 bagels, I measured to make 8. Well, the amount of eight is only good small bagels. The amount of eight only made four bagels. I think next time I make this for my family, I will make cinnamon bagels and add raisins, cinnamon and a bit of molasses to the recipe. YUMMY!!

Jay's Signature Pizza Crust

Reviewed: Oct. 21, 2011
Decent pizza. Pizza was still doughy and was placed for an additional 10 min in the oven.considering I made this without the breadmaker and the yeast kept dying, it took too long to make. I did jazz it up with lots of garlic powder and parmesan cheese on the crust.

Paula's Bread Sticks

Reviewed: Sep. 22, 2008
This was truly delicious! I dont have a bread maker so I got some quick rising yeast and combined all ingredients-(ALWAYS put the yeast and water first, then combine all ingredients in a bowl.) Then after I combined and had a big ball of dough, I put coconut oil in a bowl and let it rise for 20 minutes in a warm oven. (Remember I dont have a bread maker) After 20 minutes, I ripped pieces of dough and rolled it out into long strips and sprayed pam onto a pan. I had to let my bread sticks cook for about 20-25 minutes because of the amount of dough that I used for each one(Thats the only reason why I gave this recipe 4 stars instead of 5.). It almost came out like individual loafs.(Who cares how they looked, they were great!!) But I took garlic powder and melted butter, mixed it together and topped on the bread. Then I sprinkled some parmesian cheese onto it. Man this was great. My family wants me to make this again! Thanks Paula!! YUMMY!!!
