Banana Pumpkin Bread

This recipe was o.k. I made them into muffins instead of a loaf and added chocolate chips in addition to the walnuts. They turned out very dense and weren't super moist, the chocolate chips helped, a lot. There isn't a strong pumpkin or banana flavor. If I make these again I'll try extra baking soda or maybe another egg to try and lighten it up and probably some extra pumpkin spice. Don't get me wrong, these aren't bad by any means, they just aren't great.

Soft Glazed Pumpkin Sugar Cookies - Lauren's LatestLauren's Latest

These were pretty good, I added 2 teaspoons of pumpkin spice and am glad that I added more then the recommended amount. They turned out more cake like in density than cookie like. Which isn't bad just not what I was hoping for, I love the melt in my mouth taste of sugar cookies and this wasn't it. But they were still pretty yummy and I added chocolate chips to the second half which made them even better!

Tater Tot Casserole II

I added garlic and onion while cooking the ground beef, and then added some bell pepper and broccoli near the end. I used a can of cream of celery and cream of chicken (what I had on hand) and put a little cheese on top before placing in the oven. (didn't use any garlic powder) It turned out super yummy, with lots of flavor! I put a little hot sauce on my piece for a little extra kick but it was good without it. Will definitely make again.

Super Easy Slow Cooker Chicken Enchilada Meat

Yum! I put my chicken in the crockpot frozen and put a minimal amount of chicken broth (if any) in the mix, I also use canned tomatoes with diced chili's and for a full recipe use 3 cans otherwise there isn't enough sauce. Once everything is cooked I put a little sauce in the bottom of a pan roll up the chicken and some shredded cheese in tortillas and then top with the rest of the sauce and a little more cheese.

Cheddar-Topped Veggie Beef Skillet Dinner

This was a pretty yummy recipe. I used quinoa instead of barley and added more veggies than it called for. The instructions said to bring it to a boil however there was no liquid to boil once all the ingredients were put together so I added some water, maybe a cup or so. I thought the flavors were pretty good, my husband added a little taco sauce for extra flavor/spice and ate it with chips (he needs something crunchy with his food). I would make this again.

Baked Blooming Onion | Gimme Some Oven

I was really hoping a healthy version of the bloomin' onion would be good. It just can't compare. The onion taste is too strong and it doesn't have the same fried crispiness... just a little crunch biting into the panko... disappointed but not surprised. Some things are meant to be fried.

30-Minute Pineapple Chicken Skillet with Broccoli

This was super yummy and easy to make, it could have used a touch more sauce but the pineapple was so juicy we hardly noticed. I served it with rice. Will definitely do this one again!

Hot Apple Toddy Cocktail Recipe

This was so yummy! And it tasted like it was actually good for me (i.e. something that should help my cold). I, of course, didn't follow recipe exactly, I made a cup of hot apple cider (1 packet + hot water), 1-2 teaspoons honey, 2 oz whiskey & a lemon wedge. Definitely recommend trying it!

Chicken Pot Pie IX

I cooked my chicken (raw/frozen) and veggies (mostly fresh- potatoes, broccoli, onion, green pepper, carrot & canned corn) in the crockpot with some water so I didn't use any chicken stock. (Don't add broccoli and potato until the chicken is almost cooked otherwise they will be too mushy) I made my rue with 1/2 cup butter and 1/2 flour and a cup of milk and mixed it in with everything else in the crockpot. Oh, I also added 1/2 block of cream cheese (4oz.). Then I put it in the pie plate/crust and baked. It was super yummy! Will definitely make this again.

Macaroni and Cheese with Sausage and Pears

This turned out pretty well. I forgot to get pears at the store so I made it without. I did add a small can of diced peppers to give it a little extra spice. The texture of the sauce did turn out a bit grainy, I'm wondering if maybe the parmesan did that since I've made similar sauces and never had that trouble. I think we will try this recipe again, maybe with a spicier meat and no parmesan. I also didn't add any butter to the bread crumbs, just sprinkled them on top before baking it.

Baked Potato Soup V

This was super yummy! I made about 1/3 of the recipe to feed just my husband and I (with a few extra potatoes - mine were on the small side). I added some yellow onion when I added the milk (used 1%) which I think was a huge boost in taste. And I didn't have any bacon so I microwaved some peperoni to make it crispy and used it instead. I will definitely be making this again!

Cheesy Pumpkin Ravioli

This turned out pretty well! It was definitely savory, but very different from a "standard" sauce. Worth trying if you want to do something different. Maybe not "comfort food" enough to make it into a regular schedule for meals but will probably make it from time to time.

Slow Cooker Pumpkin Steel Cut Oats

This came out super soup-y for me. I added another 1/2 cup oatmeal in the morning to try and thicken it up which helped some. I only put in 1/2 cup of (real) brown sugar which I think was about right, and I ran out of cinnamon so I didn't put as much in. The overall flavor was pretty good, just a little too runny and mushy for me.
