About this Cook
I used to work in the hotel industry, but I love being a mom to twin boys now. I have always stayed home with them. I have a home business, and now I also work part-time as a radio DJ for a Christian music station. I love to cook for my family at least 6 nights a week, and this site is a great place to find new ideas.
My favorite things to cook
I'm not much of a baker, but I love to cook any sort of dinners. I like trying things in the crock pot, and I'm pretty good with stir fry type things. I have become quite fond of making different soups, and everyone seems to love my cheesy potato soup. Maybe I'll submit that as my first recipe! I also love marinading things for my husband to grill.
My favorite family cooking traditions
I like friends/family meals where everyone does one thing that they do really well. We all have a chance to show off our "stuff" and still have time to sit around and talk while others are cooking. That makes for a great evening. I also love it when my kids help me cook or when they tell me they love something I made for them. (especially if it happens to be healthy!)
My cooking triumphs
My cheesy potato soup is a hit. I also get GREAT compliments on a recipe I learned from Emeril. It's butternut squash ravioli with brown butter sage sauce. VERY time consuming, but it's wonderful for really special times with friends....usually a multi-course meal with lots of wine and fellowship.
My cooking tragedies
In college, I was trying to make chicken noodle soup in a dorm room with only electric equipment. I chose the crock pot as my weapon, but it didn't work out so great. I had bought mini-pasta of some sort. It didn't look like I added enough, so I kept pouring. When I checked on it later, it was FULL of swollen pasta. You would have thought it was a rice dish or something! It was horrible, and we ordered pizza.

Six Can Chicken Tortilla Soup
I love this. It is SO easy on those busy days. This year, for Christmas, I made boxes up for friends with all 6 cans and a note: "Busy Day Blessing" with the recipe. Thanks for the creative Christmas gift idea for all my busy friends!

Avocado Shrimp Bisque
I love avocado and shrimp together, so I was really excited to try this recipe. The bright green color was nice but the taste of the soup left much to be desired. Nobody in my family would eat a full bowl. I am only giving it two stars, because it may have potential as a cold soup. Warm, not so much.

Pork Roast with Thyme
BEST pork roast I have had. Everyone loved it. Tender and juicy. (Whoops...I forgot the bay leaves...still yummy.) My only note is that it was done WAY sooner! I was glad I had a thermometer in it. After one hour, it was already 158 degrees (but keep in mind it was a much smaller roast...maybe 2 pounds). The rest of dinner wasn't ready, so I just turned off the oven and let it sit there for about 30-45 minutes. Then I had it rest outside the oven, covered for 10-15 minutes while we finished making dinner. After slicing, I returned it to the pan with juices (adding a couple Tbsp. of chicken broth to thin it out and break off the bits from the bottom of the pan) and put it back into the oven to warm. Moist and delish! Thanks for a great recipe.
