Tomato Barley Soup

I love this soup! Last time I added cabbage and leftover turkey. Vegetable broth instead of water gives a little more flavor - though I like it anyway. Very easy to make too and keeps well in the fridge.

These were great - loved the flavor! I used 1t of cinnamon and 1/2t of nutmeg, per my own taste. Decorated them with mini m&m's before baking. Very easy to make also. Thanks for the recipe!

Simple Spinach Lasagna

This was my first ever attempt at lasagna, and we loved it! Per other reviewers, I used half low fat ricotta, red wine/veggie broth for the water, and put 1/2 the mozzarella on top. Also used one box of spinach and about a pound of ground moose meat. It ended up a little dry, but loved it anyway, and it was even better reheated for lunch the next day.

Salmon Patties I

I've made lots of salmon patties and this recipe is the best and easiest! I used one jar of home canned salmon and all of the liquid. Also used herb seasoned stuffing for the bread crumbs - crushed with a rolling pin in a ziploc bag. Good with celery and dill also.

Spinach and Cheese Stuffed Pasta Shells

Cabbage Soup II

I loved it! Thought it would be bland, but it wasn't. I used beef broth and moose burger instead of chicken broth and ham (that's all I had). Very hearty and tasty.

These were delicious, perfect for a healthy snack or to take on a hike. I used 1/2 applesauce and 1/2 butter, and crunchy peanut butter. Careful not to burn them.

Jam Muffins

I thought these were okay. I've made them twice, once with strawberry jam, and then with blueberry. Not much fruit flavor to them. Seemed like something was missing, not sure what though. Quick and easy to make though. Cook at 350, not 400.

Chicken and Corn Chili

I loved this chili! Didn't have time to cook it in the slow cooker, but it came out fine. I used Southwest salsa, frozen corn, and left over chicken. Served with 'excellent and healthy cornbread' from this site and green onions. Thanks!

Winter Lentil Vegetable Soup

Excellent soup! The curry gave it a little bite, but the flavor was nice, and it had a nice 'meaty' texture. I didn't bother to precook the lentils, used chopped tomatoes, and doubled the broth.

I loved this bread - good trail food or for a quick snack. Sunflower seeds are a must - they give it a nice texture and flavor. I increased the applesauce and reduced the oil a little. Keeps well in the fridge or freezer.
