Bran Flax Muffins

Reviewed: Nov. 5, 2005
These are awesome muffins! Great flavor and texture. Recipe is also on the back of Bobs Red Mill ground flax seed. I like to use cranberries instead of raisins. Don't need the oil either. They freeze well also.

I thought this was really good! Never would have though to put spinach in a smoothie. Nice texture and flavor. Thanks!

Pineapple Chicken Delight

Reviewed: Oct. 21, 2005
I thoght this was very good. The potatoes, pepper, and pineapple all went together really well. I wouldn't change a thing except maybe experimenting with different bbq sauces. I used regular flavor- thought it was a bit sweet, but overall liked it and it was soooo easy to fix. Thanks!

Easy Rhubarb Jam

Reviewed: Jun. 28, 2005
I thought this was pretty good jam and liked the combination of fruit. I did cut back on the sugar some and still found it too sweet for my taste. Will add more rhubarb and less sugar next time. Jars sealed properly and the texture was good.

I thought this soup was great. Only thing I did different was add garlic and some diced chicken. Nice flavor and texture.

Rhubarb Bread I

Reviewed: Jun. 9, 2005
I thought this was a pretty good recipe. I substituted applesauce for some of the oil and upped the rhubarb. Also I made muffins instead of loaves, and baked at 350 for 30 min. Texture and flavor were good, just too sweet for my taste, and I thought the topping wasn't necessary.

These cookies have a unique taste, but I loved them. I used applesauce in place of 1/2 the butter. Thanks!

Logan Bread

Reviewed: Mar. 9, 2005
I loved this bread - good trail food or for a quick snack. Sunflower seeds are a must - they give it a nice texture and flavor. I increased the applesauce and reduced the oil a little. Keeps well in the fridge or freezer.

Winter Lentil Vegetable Soup

Reviewed: Mar. 9, 2005
Excellent soup! The curry gave it a little bite, but the flavor was nice, and it had a nice 'meaty' texture. I didn't bother to precook the lentils, used chopped tomatoes, and doubled the broth.

Chicken and Corn Chili

Reviewed: Feb. 14, 2005
I loved this chili! Didn't have time to cook it in the slow cooker, but it came out fine. I used Southwest salsa, frozen corn, and left over chicken. Served with 'excellent and healthy cornbread' from this site and green onions. Thanks!

Mom's Applesauce Pancakes

Reviewed: Feb. 14, 2005
Very good! A nice change from plain old pancakes. I doubled the cinnamon and added a bit of water to make the batter a little thinner.

Tomato Dill Soup

Reviewed: Feb. 10, 2005
I loved this soup. Forgot to take out the bay leaf before blending it (oops). So besides the little pieces of bay leaf, I thought the texture and flavor were great.

Jam Muffins

Reviewed: Feb. 8, 2005
I thought these were okay. I've made them twice, once with strawberry jam, and then with blueberry. Not much fruit flavor to them. Seemed like something was missing, not sure what though. Quick and easy to make though. Cook at 350, not 400.

These were delicious, perfect for a healthy snack or to take on a hike. I used 1/2 applesauce and 1/2 butter, and crunchy peanut butter. Careful not to burn them.
