Ninety Minute Cinnamon Rolls

Delicious! They turn out every time! I sometimes frost them with a thin sugar frosting that hardens when it cools, and when I'm feeling especially decadent, I make a gooey cream cheese frosting. Either way, they are scrumptious!

Peanut Butter Cup Cookies

Amazing!! I freeze the peanut butter cups, as some other reviews recommended, but I stick to the recipe. My husband can't get enough of these things!

Chicken Tortilla Soup V

I always use this recipe as a base and kind of do my own thing, but the resulting dish is always amazing! To start: I brown the onion and garlic first, then add all the ingredients except for the corn, throw the chicken in to cook until it's falling apart. Then I remove the chicken, add a cup of rice and the corn. Meanwhile, I shred the chicken and add it back, stirring the soup all the while- otherwise the rice will stick to the bottom and burn. Once the rice is cooked, I add a can of black beans- drained, let the soup simmer for another 10-15 minutes and voila! I use blue corn chips, which I put in the bottom of the bowl, along with shredded cheese, a slice of avocado, and a dollop of whipped cream and we are good to go!

Carrot Cake III

Amazing!!! I left out the nuts, used half brown sugar and half white. I used some applesauce to replace the oil because I don't like using that much oil if I can avoid it. For the frosting, I mixed the cream cheese, butter, and vanilla together, adding powdered sugar until I was happy with the taste and consistency. I made 24 cupcakes at 350 for 25 minutes. DELICIOUS!!!

Broiled Tilapia Parmesan

AMAZING!!! I could eat this every day! My sister, who is a vegetarian requests this recipe every time she comes to visit. We have it on a bed of rice, which soaks up the juices from the fish and sauce.

Blueberry Cheesecake Ice Cream

This was delicious!!! I thought it was a little too sweet so next time, I will use a little less sugar and maybe half cheesecake and half vanilla pudding. I also let my batter chill in the fridge for 2 hours and then after layering the ingredients and swirling, I stuck it directly in the freezer, taking it out every 30 minutes and mixing it up until the edges were completely frozen. The family loved it!
