Spaghetti Squash I

Reviewed: Aug. 26, 2010
This was super yummy! We didn't have the tomatoes and it was still good. Next time I would just cook the squash in the microwave with a damp paper towel. The roasted squash took closer to an hour then 30 minutes.

Slow Cooker Scalloped Potatoes with Ham

Reviewed: Dec. 28, 2008
This was a very good recipe. I did have to make some changes because I realized while I was putting it together I did not have an onion or Cream of Mushroom soup. Instead I used Cream of Chicken and a packet of Onion Soup mix seasoning. I also used Red Potatoes and left the skin on. I added milk instead of Water as mentioned in many other reviews. My two year old loved this. I will make it again.

Butternut Squash Soup

Reviewed: Jan. 18, 2009
This was wonderful. I roasted the squash with some Olive Oil, Cinnamon, and Coriander for about 60 minutes. I added a diced potato to the soup mix to thicken a little. We just added a spoon full of cream cheese to our bowl and it was perfect. I will be making this recipe a lot :).

Scones

Reviewed: Jun. 26, 2010
Wow! These were great. No need to buy expensive ones from the coffee shop any more. The they were moist an flavorful. I mixed the egg and milk in a measuring cup (egg whisked) then added only a little at a time. I used about half of the egg milk mix. I mixed in Raisins and Cinnamon before cutting. I will make again with a variety of other ingredients.

Grandma Maggio's Spaghetti Sauce

Reviewed: Jun. 26, 2010
Wow! This sauce was amazing. My hubby and daughter gobbled it up served over spaghetti with some Parmesan cheese. I did not use the mushrooms because I don't care for them but followed the directions as written. I used a white Merlot wine.

Hamburger Buns

Reviewed: Jul. 25, 2010
These were very good. I scaled back the recipe to make 8 and brushed the tops with olive oil and sesame seeds before baking. The only thing I did different was used dried active yeast which meant I let the do rise in a warm oven for 30 minutes before shaping into 8 buns. I let them rise for another 15 minutes in a warm oven before baking. I will definitely make these again.

Clone of a Cinnabon

Reviewed: Aug. 7, 2010
These were Amazing. I followed the other reviews for making this in a Stand mixer since I don't have a bread machine. The only problem I had was that 15 minutes was not enough time in the oven. The buns looked golden brown but they where still doughy on the inside so I had to bake them an extra 15-20 minutes after they were iced. The icing recipe makes more then enough. One tip is to follow the proofing directions on the package of yeast. I also let my dough rise in a 200 degree oven that was turned off and then let them sit in the fridge overnight. These should be called 'Better then Cinnabon' because not only are they easy to make but they save you a ton of money :)

French Bread

Reviewed: Aug. 7, 2010
I made this in the stand mixer instead of a bread machine but it was still easy and yummy. To make in a stand mixer if proofed my yeast according the the package directions with the water and sugar, then I added the salt and mixed in the flour a little at a time. The amount of flour needed depends on the weather at the time of making. Some days I need a lot more then 3 cups other days 2-3 work fine. I mixed until dough because a soft ball (not sticky) then continued on with the directions as described.

Pumpkin Pancakes

Made these for Halloween Breakfast and they were fantastic! The only change I made was using Pumpkin Pie spice instead of all the separate seasonings. The other change I made was that I didn't have the vinegar.

Good Old Fashioned Pancakes

Reviewed: Dec. 25, 2010
I made this just as written except that I added a 1 teaspoon vanilla to the egg mixture. They were wonderful. I would cut back a touch on the baking powder next time but this is a keeper. I won't have to buy store bought mix any more.

Banana Bread

Reviewed: Dec. 26, 2010
I was skeptical about this recipe since I have tried so many Banana Bread recipes and more often then not they are terrible. However, I was wrong. This one was fantastic. I did make a few minor changes: 1) Used 1/3 cup brown sugar and 1/3 cup white sugar 2) Added 1 tbsp of Vanilla, 1 tsp Cinnamon, and 1/2 tsp Nutmeg to the mashed bananas 3) Stirred in Currents that I had on hand I will definitely make this recipe again.

Pizza Dough I

Reviewed: Jan. 1, 2011
I made this tonight for dinner and it was wonderful. The only change I made was to use 1 cup of Whole Wheat Bread Flour and 1 cup All-purpose flour. I mixed everything in the stand mixer and baked the crust for about 10 minutes at around 400 degrees before I added the sauce and toppings. I will make the many more times. Thanks for sharing.

Best Brownies

Reviewed: Jan. 3, 2011
These deserve a 10 star rating. These were the best brownies I have ever made. They turned out moist and chewy. I followed the directions as written using Gheridelli Cocoa powder except that I didn't make the icing since I don't care for it on Brownies. I will make these again in the future. The best part is that they were so easy my 4 year old was able to help me make them. No more store bought brownies for me.
