Chinese Pepper Steak

We liked this recipe, basically followed instructions except used 1/2 red and 1/2 green pepper. Used Splenda in place of sugar (faster dissolve). Next time I will double the marinade (for more sauce over the rice) and let it soak for awhile as the meat was rather chewy. I will also reduce tomato (roma) to 1 (family preference) and maybe toss in a few sliced mushrooms. Easy & tasty! A great way to stretch 1# of beef too.

Easy Vodka Sauce

Took other reviewers advice and made a few modifications. Used combination of butter and olive oil, added minced garlic and 1 t Italian seasoning (Penzys). One note - after initial onion/garlic and vodka cooking, I reduced heat to simmer - medium on my stove was much too hot. Served over rotini pasta on a bed of wilted spinach. Yum! We loved this recipe and will use again and again. Put the leftover sauce in the freezer for easy future dinners.

Uptown Cowboy Caviar

I tried this recipe as written and served it with dipping corn chips and Tostitos for a recent party. You really need something substantial to load this dip onto the chip. It had a really good flavor and made a TON. So much leftover I had to think about what to do with it after we got tired of the chip routine. Well I found it makes a wonderful addition to a plain tossed green salad. You don't even need salad dressing, just toss it all together and maybe add some tomatoes. This recipe takes a little work to make. Do not leave out the fresh cilantro, in my opinion that makes the combo all that much better. I will save this recipe for something special but on those occasions where I'm pressed for time, I think the standard cowboy caviar using beans, corn, salsa and Italian dressing works just fine.

Slow Cooker Sweet Potato Casserole

Just the recipe I was looking for to take to an office potluck. I doubled the recipe and cooked in my 5 qt crockpot (with space left over). Saved a small casserole-sized dish to cook in the oven later. I used a large mixing bowl and electric hand mixer to mash the potatoes and mix with the wet ingredients(easy!). As other reviews recommended, I also doubled the topping. NOTE: Recipe ingredients call for 2t butter but references 2T butter in the directions (you will want to use T). Also sprinkled a dash of nutmeg & cinnamon on topping. Thanks for this easy and delicious recipe. It was was a big hit at the potluck and will go into my permanent file.

Cranberry Pumpkin Muffins

Followed with recipe with the exception of substituting pumpkin pie spice for the 4 spices. Also added chocolate chips as others suggested. Came out okay but taste was nothing special, seemed kind of bland, maybe increase spice next time?? I would also skip the chocolate chips and add nuts instead.

Slow Cooker Green Bean Casserole

Tried this for potluck at work and it came out great! Used Jackie's alterations with one can each cream of mushroom and cream of chicken soup, along with 4 cans of green beans (drained) - just the right amount of sauce w/o being too soupy. I also added about 1 t soy sauce and a dash of garlic to the recipe. Freshly grated parmesan added a nice flavor. Cooked on LOW about 5 hours. This dish was a real hit and so easy. I will definitely be making this one again and again. Thanks Hollus2!

Marinated Grilled Shrimp

I tried this awhile back with recipe exactly as written. We liked it and just returned to try again. This time I did not have tomato sauce so I substituted with ketchup. Couldn't find my skewers so I tossed the shrimp onto the George Foreman grill and cooked for a couple minutes. Yum! I like tomato ketchup better than the sauce - and now I don't have to worry about what to do with the leftover canned tomato sauce. Excellent recipe either way, so easy and very tasty. I think the fresh basil is a requirement - don't try to skip it. The shrimp made a nice addition to the top of a spinach salad tonite. We will use this again and again!

Skillet Pork Chops with Potatoes and Onion

I had to make a few changes based on what I had on hand. Dredged the pork chops in the flour mixture with parm cheese, garlic salt and pepper, then browned as directed. Removed them and added onions and sprinkled with the leftover flour/cheese mixture. Added pork chops back to the skillet and poured in the beef broth w/ lemon juice (reduced to 1 cube after reading other reviewers comments). Very tasty -and the extra flour made a nice saucy gravy. I can't wait to try it with potatoes next time.

Refried Beans Without the Refry

I had lots of dried pinto beans and was looking for a recipe without all the fat. This one fit the need just perfectly. I was a little skeptical about not chopping the onion but I followed as directed and found it cooked up nicely and also mashed perfectly with the potato masher at the end. I used 1/2 jalapeno as directed but think it could easily have handled a whole pepper w/o overpowering. Did not add any salt until the end and then just used about 2-1/2 t which seemed to be plenty for our taste. Cooked in my slow cooker as directed, never needed any additional liquid - drained a lot off when they were done. They reheated nicely the next day too. This recipe will be used again and again at my house.

Best Spanish Rice

I was looking for a rice side dish to go w/ an enchilada casserole. This recipe was just right and sooo easy! I followed recipe just as directed and it came out perfectly. I think the secret is to use a good chunky salsa. The one I used was med spice w/ garlic. No additional salt needed. This recipe is a keeper for my family.

Terry's Texas Pinto Beans

I used this recipe as directed except I used my slow cooker. I soaked the beans for atleast 12 hours first. For some reason it took forever and after 12+ hours on LOW, I turned up to HI for a few hours and the beans were still a little hard. Finally put everything on the stove and simmered for a few more hours and viola, they were done. I used regular chicken broth (not low sodium) and my beans were old so maybe that was the problem. I have read that adding salt during the cooking process will cause the beans to remain hard. Overall I thought the taste was ok, but after the long process, I guess I just expected something more amazing.

Creamy Dill Dressing

I was looking for a dill dressing to go with a green salad, used leftovers for veggie dip (perfect w/ celery & carrots) and quite by accident found it makes wonderful sauce for salmon. Loved this recipe! Only change I made was to substitute Splenda for the sugar to make it even more low carb. I dumped everything into my Tupperware shaker bottle and mixed it up, one container and no stirring required. What a tasty find. Will use this one again and again.

Pork Tenderloin with Creamy Dijon Sauce

Made recipe as directed but substituted a 3# pork roast for the tenderloins. Cooked on LOW for 8+ hours and it was fall-apart tender. Made plenty of sauce, easily thickened with a bit of cornstarch at the end. Would have been nice w/ mashed potatoes or rice. Only change I would make is reduce onion or simply quarter them, they turned into mush - maybe because I cooked so long. Taste overall was very good, don't skip the white wine because I think that helps make this recipe.

Make-Ahead Turkey Gravy

Gravy was good but not exceptional in light of all the work is was to prepare ahead of time. I prefer cornstarch base to the flour, this seemed a bit heavy to me. I think I spent more effort making gravy than baking the turkey. Next time I will go back to my pan-drippings and make the usual gravy.

Easy Sausage Strata

Just the recipe base I was looking for. Perfect for some stale wheat sandwich bread I found in the freezer. Cut bread into cubes while frozen makes it very easy. I used link sausage (removed from casings) because that's what I had on hand. This dish was a big hit at work, baked in a foil 11x7 pan and no clean-up. I can see all kinds of possibilities for variations in the future, but you really can't go wrong with the basic recipe either.

One Pot Pinto Beans

This is a great recipe but beware - it makes a LOT of beans! I used about 1 t salt and 1 t Tony Chachere's More Spice seasoning along with the 1 T red pepper flakes, still needed more salt in the end. I added another 3 C water during cooking process, think it might be good to just start out w/ more water.

Easy OREO Truffles

Great recipe with a ton of flexibility. I first experienced these at a party where someone made them with mint-filled Oreos - decadent! I substituted choc & white choc almond bark for the baking chocolate. Use a food processor for easy prep - I dumped whole cookies and chunks of cream cheese and it mixed up perfectly. Roll the balls and refrigerate for atleast 1 hour, then dip into melted bar using toothpicks. Easy and elegant. Everyone thought they were store-bought!

Slow Cooker Spicy Black-Eyed Peas

Have used this recipe for the last few years in our New Year's celebrations. This recipe is perfectly seasoned, no changes needed and it's so easy! I think the jalapeno makes the dish. The crockpot is a perfect way to cook this recipe, no pre-soak needed on the peas and 6-8 hours cooking is about right. Used up leftover holiday ham and subsititute salt pork for bacon. We like it served with white rice. NOTE: After making this recipe for a number of times, I have determined that adding salt AFTER cooking produces better results and softer peas.
