Perfect Ten Baked Cod

This came out well, but I used multigrain crackers as I did not have Ritz. I also substituted citrus seasoning for fresh lemon (didn't have any on hand) and put all the ingredients together from the start and baked for 20 minutes. No mushy topping on the fish. Very good.

West African Chicken Stew

Made with my kids tonight using left over turkey rather than chicken. My near 3 yr old had two helpings. I will make again, but I will reduce the potato and add about a cup more stock. Overall all very filling recipe and pleasing.

3 stars on its own, 4 stars with modifications. I added chopped red onion (approximately 1/4 cup), 2 tablespoons minced garlic, and 1/2 cup sweet peas that had all been sauteed in 1 Tbs EVOO then mixed with the sauce as listed within the recipe. I also added 2 Tbs of white cooking wine and seasoning salt, then incoporated the buttered egg noodles. Good with some crusty bread.

David's Yellow Cake

Excellent! I accidently doubled this recipe, but I followed the recipe as directed. The only change that I made was using AP flour (no cake flour on hand) substituting 2 TBSP of cornstarch for 2 TBSP of flour for each cup. Scrumptious! Doubling easily made 36 cupcakes and 1 bundt cake.

Southwestern Rice

Good basic recipe. I didn't have frozen corn or chicken stock, so I substituted canned sweet corn and replaced the chicken stock with 1 vegetable bouillion with 2 cups of water. I also doubled the amount of cumin listed and added 1 tsp of Chipolte Chile powder, 1/2 tsp ground black pepper and a dash of salt. Served with blue corn chips. Delicious.
