Catherine's Spicy Chicken Soup

Made this for dinner this evening and it was really yummy. I used the diced tomatoes with green chilies (medium heat). I made it even simpler by buying a rotisserie chicken from the store. I just used a box of chicken stock since I didn't have to cook the chicken. My husband enjoys spicy stuff so this had just enough heat to make him happy & still be edible for me. I will make this again.

Upside Down Pumpkin Cake

I am not a big pumpkin fan. I will eat it every now and then. We were having a pumpkin baking contest at work and I decided to enter. I thought this recipe sounded good and it had good reviews so I tried it. It was very easy to make. I made it exactly like the recipe stated. I did line my pan with wax paper to try to keep it from sticking. When I flipped it one corner broke off. I just stuck it back on there and decided to enter it anyway. Visually it wasn't that pretty. The contest had an appearance category and a taste category. I tied for first in the taste category...so thank you for this recipe. I really liked the taste, even though I don't really care a whole lot for pumpkin.

Annie's Fruit Salsa and Cinnamon Chips

I made this today for a church function. The only thing I changed - I didn't add the white sugar and instead of raspberries I used 1/2 bag of frozen peaches that I diced. I used peach preserves. It came out wonderful. And just as all the other reviews said, everyone loved the cinnamon chips. They did turn out good. So this recipe was a complete success. Thanks.

Aunt Teen's Creamy Chocolate Fudge

I had been looking for a good chocolate fudge recipe. I was making fudge for a bake sale and I found this recipe. It had good reviews so I decided to try it. It was so simple to make and came out perfect. I made it just as the recipe stated and thought it turned out wonderful. I sold every piece and even had one girl come back and ask for the recipe. She said it tasted just like the kind of fudge you buy at one of the fudge shops. Pretty good compliment. Thanks Aunt Teen.

Delicate Lemon Pound Cake

This is very similar to a recipe that I make already. The only differences are that I use 3 cups sugar and instead of 5 eggs - I use 3 eggs and 2 egg whites. I also don't use vanilla. It is one of my family's favorite cakes. I never have a problem with dryness.

Chicken Pot Pie IX

I made this because my husband likes Chicken Pot Pie. I had only tried the frozen ones & didn't care for them. I have to say this was really good. I went exactly by the recipe except I used a bag of frozen peas & carrots. I was afraid my sauce turned out too thick, but after everything was baked together, it was perfect. When you cut into it the filling didn't run out everywhere. My husband was quite pleased with it. I will make it again. Thanks.

Coconut Cream Cake I

I used to make this cake quite often. I never used sweetened condensed milk with it though. I just poked the holes in the cake and poured on the cream of coconut. It was just right. I think using the sweetened cond. milk would make it way too sweet. Everything else was pretty much the same though.

Chocolate Eclair Dessert

I have made this recipe for years also. It is one of my favorites but I also have always used a chocolate glaze for the topping. I think canned frosting is too thick & way too sweet. The pudding & graham crackers are sweet enough. The glaze is a little bitter by itself but put together with the pudding it is just right.

Comforting Cube Steaks

I never would use cube steaks because they never would get tender enough for me or my husband. I tried this recipe though and the steaks are nice & tender. I was a little concerned about the lemon-lime beverage but it tasted really good. I have made this 4 or 5 times now & I really like it. I have omitted the cajun seasoning though. It was ok with it but I like just salt & pepper better.

Cola Pork Chops

I never would eat pork chops but my husband loves them. When I saw this recipe I decided to give it a try. I love it. The cola and ketchup blend well together. Even my husband enjoyed it. Thanks for a recipe that allows me to eat Pork chops.

Hamburger Vegetable Soup

It was just okay. I guess I like my vegetable soup to have more of a tomato flavor. This definately had too much onion. Probably 1 pkg. of onion soup mix would have been plenty. Probably will not make again.

I've made these cookies for years. They are probably my absolute favorite home baked cookie. We usually give some out as Christmas gifts. I think the flavor is amazing and I love them best 5 or 6 days later.

Pot Roast in Foil

LOVE IT!! I have made pot roast many times with the different pre-packed seasoning packets. I never really liked them and I am still new at cooking and wasn't sure what to try. I decided to give this recipe a try and am I glad I did. The beef was really tender and had great flavor. I did add potatoes and carrots to it. It made a great gravy which my husband really liked. I will probably make pot roast a lot more often now. Thanks!
