Baked French Fries II

Reviewed: Oct. 26, 2004
These were very good but did stick to the baking sheet a little even when I sprayed it with non-stick cooking spray. My question is how do you slice them in 1/4 strips then lay them in the pan skin side down?? It's obvious that the only pieces with skin will be the ends (no matter how you slice it) :) I used the suggestion of one review who shook them in a bag with olive oil & the seasonings - very good.

Spinach Stuffed Chicken Breast

Loved it! Wonderful combination of flavors. I could not find pepperjack cheese so I used a cheddar/colby mix & it tasted great. Will definitely make again!

Potato Spinach Casserole

Reviewed: Oct. 20, 2004
This was absolutely delicious! I used fresh, chopped spinach & added some garlic. Didn't have green onions so I used regular chopped onlion. I also added a little half & half to potatoes while mashing. I combined everything ahead of time, refridgerated, then put in casserole dish & baked during the last half of my stuffed chicken/spinach recipe. Great combination & just as good leftover!

Becki's Oven Barbecue Chicken

I thought this was good (& easy) but it could use some added hot sauce.

Burrito Pie

Reviewed: Oct. 19, 2004
I LOVE mexican food but I thought it was just "okay" and my boyfriend said to make it only once a year. I cut the recipe in half but ended up adding the whole jar of taco sauce because it was dry & there wasn't enough of the mix to spread. I suggest if you do cut it in half to go ahead & use the entire jar of taco sauce, black olives, green chili's & diced tomatoes, but still only use 1 can of the refried beans. Also use at least 8oz. of cheese. It didn't seem very spicy to me at all.

Death By Chocolate III

Reviewed: Oct. 15, 2004
I've made this a little differently. Add 1 small cool whip to the chocolate pudding mix. Also used a small bag of Heath Bar "Bits of Brickle" instead of the english toffee bars. You can also substitute the pudding mix with 3 boxes of chocolate mousse for a little thicker consistency & flavor. If using the mousse, do not add the small cool whip to it. This has been a favorite at all events but is a dessert that requires lots of mouths.
