Classic Greek Spinach

Reviewed: Apr. 30, 2008
Thankfully I read the previous reviews and reduced the amount of oil used to 1/4 cup. Also added some dried parsley and chilli flakes to the boiling water before stirring in the rice. Served it with Souvlaki and Tzatziki (recipe for both were also obtained on this website). Dinner was an absolute delight for the entire family.

Absolutely fantastic......I need not say more. I did not need to change a thing about this recipe.

Pipirrana (Spanish Potato Salad)

Reviewed: Aug. 6, 2007
Fantastic combination of flavours. I love the flavour of cilantro so chopped up a few sprigs and added those in. Also added a finely chopped chilly as a personal preference. Used this salad as a filling for a toasted sandwich on Whole Wheat Bread with a few lettuce leaves and some salted potato chips for some crunch. The preparation for this recipe was very simple and the result was a simply delicious lunch.

New York Cheesecake III

Reviewed: Jul. 31, 2007
This was my first time baking a cheese cake and it turned out pefectly.....no cracks and great tasting. However, I have an 8" spring form so I reduced the amount of cream cheese used to about 750 gms (approx 1.6 lbs) Also used 4 eggs instead of 5 and reduced the amount of sugar by 1/4 cup and the flour by 1/2 tbsp. Also I have never blind baked a pastry before either and fortunately for me it wasn't much of a disaster although the pastry did sag ever so slightly along the sides of the spring form while I was blind baking it. So for next time I would be a bit more cautious. I was told that it would be a good idea to use dried beans to hold the pastry in place before before blind baking. Anyhow, eventually the cake turned out great. I followed every instruction on blending, baking, leaving it in a warm oven, chilling overnight, etc., to a tee. Even resisted the temptation to open the oven door at any time during the baking process and after while I left it to cool in the oven and the result was a perfectly baked cheese cake which I served with Strawberry Sauce and was devoured by my guests who were really keen on getting their hands on the recipe.

Shrimp Fried Noodles - Thai-Style

Reviewed: Dec. 12, 2006
The noodles tasted great but turned out a bit dry. So when I made it for the second time, I added an extra tbsp of Ketchup and fish sauce and also a bit more sugar. I love spicy food and so added some chopped fresh chillies as a personal preference.
