I had a few bananas that were going bad so I thought - why not try and make a banana bread. I made several tweaks to this recipe to suit my tastes - I used 3 bananas instead of 2 because that's just what I had, I also added 1/4th cup of brown sugar and a teaspoon of cinnamon to the recipe. I used enriched bread flour and I didn't have sour cream so I just omitted it and it turned out moist without it. I'm definitely going to try this recipe again but I'm going to play with the amount of sugar it calls for - perhaps do 1/2 cup sugar and 1/4th cup brown just to see. I think that this is a fantastic recipe because it serves as a great template for the bread. Thanks!
