Oatmeal Blueberry Muffins

I just took the muffins out of the oven and eating them while typing this review......they weren't dry at all or dense! I cooked them at 400 for about 18 minutes and maybe could of been taken out at 16 minutes........I used half white flour and half whole wheat, used brown sugar and added a bit more, applesauce instead of oil, and non fat Lactaid milk, I also added more blueberries, which I won't do next time, it was a bit too much. I put in some cinnamon which I don't even taste, and some vanilla. Next time I will put in flaxseed which I had out but forgot to add. They aren't super sweet but definitely not bland. I am trying to figure out why so many people said they were dry, maybe over mixed? I will make again because I feel they are healthy with the changes I made.....enjoy!!

Banana Blueberry Muffins

Just made these muffins and eating my third one as I type this review.....I used half whole wheat flour and half white flour....added extra brown sugar because of all the reviews.......also added flaxseed......I did find the batter very very dry while I was mixing it , and added some non fat milk and it was perfect........the muffins are delicious, I don't find them bland at all!! Yes, they are a bit dry, but, that's alright......will definitely make again....

Fluffy White Frosting

This is the best frosting ever!! Made it last week for my cupcakes and making it again later for my cake! I will admit, it does take much longer to get "peaks" than it says...... but, worth the tired arm!! I especially like that it's not that sweet, just right.

Simple White Cake

I was worried about making this cake this morning, with so many negative reviews about the cake being very dry and dense and needing more than 1/2 cup milk. I followed the receipe and had more milk ready just in case I needed more. After putting in the 1/2 cup milk, it was so super smooth, there was no reason to add more milk. That surprised me after what I read about the batter needing more milk. I made cupcakes, so, when they cooled off, I had one so that I could finish this review, it was the most perfect, moist cupcake I ever ate!! I really don't understand how so many people can have different opinions, so, don't let this receipe scare away a new "baker" that wants to try this cake! Only different thing I did was use egg whites since I can't have yolks and used Lataid milk since I can't have dairy. Perfect cupcakes!!

Streusel Topped Blueberry Muffins

Just made thise muffins early this morning and thought they were great! I never use butter or oil, only applesauce but didn't have any so the fat in them isnt good for me, but, I used egg whites and non-fat, non-dairy milk. I was only able to make 6 for some reason. The next time I am making them in a cake pan, they tasted more like blueberry cake instead of muffins. And of course next time I will use applesauce in place of butter. Actually looking forward to having them again!!

Sweet Potato Pie IV

I made this sweet potato pie last night with our turkey dinner. I feel so foolish, my daughter told me it't a dessert and I usded it as a vegetable, but it was toooooo sweet. I only put a tiny bit of the condensed milk and not much sugar, but it was way too sweet for me. I may make it for my family on Thanksgiving for a different dessert. I was wondering, did any one else use this as a vegetable? Is it only a dessert?

Jewish Coffee Cake

I read this morning about the Jewish Coffee Cake and the reviews sounded great!! The mistake I made was forgetting everyone's comment about checking the cake after about 45 minutes!! I waited one hour and it was super dry!! I will try it again next weekend and will be careful to check it much, much sooner!!
