Grilled Chicken with Peach Sauce

Baked Coconut Shrimp

Made it just as described, served with orange marmalade and it was very good. Popular at a potluck and I was asked for the recipe. I would recommend baking them on aluminum foil or parchment paper as the cookie sheet was a mess after; I also broiled them at the very end so the coconut browned as I found it was still white after 20 minutes in a 400 degree oven. For 37 jumbo/large shrimp, I had at least 1/2 cup of coconut left over.

Made it for family Christmas brunch and it was excellent. You are right about the custardy texture! The only observation is that mine took almost an hour at 325, which meant it couldn't cool as long as recommended the way I'd planned.

Vinegar and Egg Crust

This pastry worked really well for me. I followed the recipe's advice to roll between 2 sheets of waxed paper, and also other reviewers' suggestions to chill in fridge first and sub in some butter for the shortening (I used 3/4 c shortening, 1/2 c butter). Thanks for the recipe!

Three Olive Spread

Very tasty. I made it as a sandwich spread (with avocado, thin sliced tomato) based on a sandwich I ate in South Africa. I actually left out the vinegar because I thought it was savoury enough. Definitely salty - have water handy!

October Oatmeal Pumpkin Muffins

A great muffin for pumpkin lovers. The pumpkin flavour was just right, as were the size and texture. I doubled the recipe and made 16 good-sized muffins. (I used buttermilk since it was on hand, and fresh nutmeg.) Definitely a keeper!

Chocolate Cappuccino Cheesecake

I made this for a staff Christmas party and everyone raved about it. Making it was a bit stressful because: 1) the melted chocolate formed soft lumps as soon as I poured it into the batter - I saw this happened to another reviewer. 2) after cooling, I had about 2 tbsp of congealed butter that had leaked through the springform pan from the crust. I don't know why. I hand-squeezed out the chocolate lumps (it hadn't seized). As per other reviewers, I upped the crust 1.5 times (good idea), baked it at 325 for 1 hour (only 1 small crack), used 1/2 c espresso instead of the liqueur/coffee and microwaved the chocolate, added the cream after and let it cool a few minutes. Would I make this again? Definitely. It took me about 3 hours from start to finish! I served it with raspberries and chocolate curls on top.

Cilantro Tomato Corn Salad

Made it twice in the last week... great way to use a bumper crop of cherry tomatoes! (I just substituted olive oil for the butter despite the reviews raving about the butter... didn't want to risk the congealed look at a picnic.) Second time I tossed in some leftover quinoa for a lunch salad... yum.

Cappuccino Flats

Apple Coleslaw

I made it exactly. Very good - found dressing a little bland and overly peppery for the tasters' tastes. Nice that it doesn't have sugar overload or swims in mayo like some coleslaws. Recipe doesn't make much dressing - if you use even half a cabbage, I think you'll need more (I used 2/3 of a cabbage = 8 cups.). So next time I will cut back the black pepper, add a nip of cayenne, double the dressing. P.S. I salt-soaked the cabbage after shredding it - my first time and definitely the way I will do it again to get the right texture and avoid milky-runoff-puddle.

Layered Lemon Dessert

A very tasty dessert. I like the suggestion to make in a springform pan; will try next time. Definitely takes time (make a layer, cool it, make a layer, chill it...). Like others I worried about the vinegar b/c the filling smelled strong even after cooking but it did vanish entirely on the dessert.
