Barbecued Beef Cubes or Hamburger

Reviewed: Jan. 28, 2009
Pretty good recipe. I altered some things based on the reviews. Used 3 Tbs brown sugar instead of 2 Tbs white, used tomato sauce instead of ketchup, kosher salt instead of table salt and served over wild and brown rice. I would also mix up the ingredients prior to adding it to the meat.

Bulgur Wheat with Dried Cranberries

Reviewed: Jan. 26, 2009
I didn't have chicken bullion granules so I substituted with a tsp of Kosher salt. I also used salted butter. I used more then 1/4 cup of cranberries and it still worked out great!

Amish Breakfast Casserole

Reviewed: Jan. 8, 2009
Great recipe. I cooked the bacon and onion together and put it in the fridge overnight so that I could quickly mix everything together and bake on Christmas morning. Next time I try this I will add more eggs, as the recipe is pretty rich. Also, don't wait for the bacon to get crispy with the onion - almost impossible cooking it that way. Next time I may try to cook the bacon first and then cook the onion in the bacon "juice".

Spicy Bean Salsa

Reviewed: Dec. 4, 2005
I have been making and passing the recipe along for several years now. It is excellent, expecially for those who don't like traditional salsa.

Big Soft Ginger Cookies

Reviewed: Dec. 4, 2005
These are great!! I have been making these for a few years now and think its a near flawless recipe. I would suggest using butter instead of margarine to make the dough a little less sticky (just make sure not to use melted butter). I also think the butter compliments the flavor of the cookie. I cut the amount of ginger slightly using only 1 1/2 tsp. I also do not flatten the cookie at all and they still turn out perfectly!

Beaker's Vegetable Barley Soup

Reviewed: Jan. 21, 2009
Great recipe. I didn't have zucchini and substituted peas for the garbanzo beans and it still turned out great (added near the end so they wouldn't break down)! FYI you need about 8 cups veg broth (2 quarts). I was out and actually made my own using the same veggies I needed for the soup!

Chocolate Chocolate Chip Cookies I

Reviewed: Feb. 15, 2009
Awesome recipe. After reading the reviews I used half butter and half shortening. In an attempt to make this a little more healthy, I used half whole wheat flour and half unbleached all purpose. I also cut the sugar down to 1 cup and added 3 tbs of milled flax. As opposed to chocolate chips I used the peanut butter and chocolate swirled chips. Rave reviews from my health nut hubby and our 4 and 6 yr old niece and nephew.

Braised Balsamic Chicken

Wonderful recipe! Next time I will use more chicken as the recipe creates quite a bit of juice. The chicken was very tender and my husband raved about the meal! Said it was one of his favorite chicken dishes.

Peppermint Meringues

Reviewed: Jan. 5, 2009
I made meringues once when I was very young and I remember it not going very well... I thought this recipe was fantastic! They came out tasting great even though it had soft peaks after adding the sugar. I am making them again this week and doubling the recipe!

Slow Cooker Chicken Taco Soup

Reviewed: Jan. 1, 2009
I love this recipe and it has quickly become a staple at our house and with our friends. I replace the chili beans with red kidney beans, replace the beer with chicken stock and cook on high for 3 hours or so before I tear the chicken. One of our friends claims this is one of his top favorite meals of the year and the guys even requested this for a bachelor party weekend!

Cheesecake Cookie Cups

Reviewed: Jan. 1, 2009
What a great and easy recipe! I made this for the first time for a New Year's Eve party and they went over great. The exact amount of cookie dough to use in the bottom of the cups is not specified, but I would suggest not trying to fill the bottom with raw dough before baking. Perhaps fill 3/4 way and let them expand in the baking process. I wasn't able to get the cheesecake mixture perfectly creamy, but it didn't matter once they baked. I will definitely make these again.

Hot Artichoke Spinach Dip

Reviewed: Jan. 1, 2009
Great recipe and very easy. I tried a blender and it did not work at all (maybe I have a bad blender). I didn't have a food processor so I used a mini-chop and that worked perfectly! I doubled the recipe and put it in the fridge until right before the party. It took a little while longer to cook (about 35 minutes), maybe because it was in the fridge or maybe because I doubled the batch. Regardless, the recipe went over great! We had about 15 people and it was almost gone by the end of the evening. I will definitely be making this again!!
