Butterscotch Gingerbread Cookies

My friend and I enjoyed making these cookies together, and our boyfrends enjoyed eating them. These cookies were quite good, but my friend and I were concerned that they were slightly greasy and a little too sweet and salty. I'm trying to think of ways to modify the recipe. Already we used only 1 1/2 sticks of butter instead of 2 sticks. Perhaps I'll put in some applesauce next time? I'll definitely halve the number of butterscotch morsels. I'll definitely try it again. (The menfolk did not have a problem with either greasiness or sweetness. Go figure.)

Veronica's Apple Pancakes

This recipe is great! Quick to make and keeps well in the refrigerator for a few days. My friend liked them very much, even though she is a health nut. My boyfriend, who is quite the opposite, is also interested in trying them. I find them very satisfying yet delicate. I like using butter in the frying pan instead of oil, but that's personal taste.

Pumpkin Pancakes

I love these pancakes! Thick and hardy, they taste great and are very satisfying. I doubled the amounts of the spices and found that I could stand to add a little more. So far I've made this recipe twice and loved it. They eat great on their own (one could probably even carry them and eat like a piece of bread) but I like putting butter and brown sugar on them while they're hot. So delicious! Thank you for this recipe!

Apple Maple Crumble Pie

So wonderful! My boyfriend adores appley desserts and I was looking for a quick alternative to pie. I love maple, too, so it looked like a winner. By the time it was out of the oven, he had been snacking and said he wasn't hungry, but when he saw me eating it he asked for a bite. After one bite he asked for a second, and after that, he got his own plate! He loved it, as did my brother, father, and mother. A total hit! Thank you so much for this recipe, Helene. This will be a staple dessert for us. My mother asked for the recipe before she was even done eating hers.

Pumpkin Sheet Cake

I made this recipe for my best friend's birthday this January. She adores pumpkin and the only frosting she likes is cream cheese, so it sounded to me like the perfect cake for her. It was! She loved it, and after she let another guest take home some of the leftovers (everyone else liked it too) she said she wished she had kept it all for herself! I made it according to the recipe exactly, except that I put in almost twice as much pumpkin--probably around 28 ounces. Maybe that's why the cake was so very dense. The denseness was my only real problem with it, and I probably brought that on myself. I made it in two 9" round pans--my first layer cake--and they came out pretty flat. But still tasty! Thanks very much!

Whole Wheat Ginger Snaps

I was a bit puzzled by these cookies. When I tasted them fresh from the oven, something about the taste seemed "off". But then the longer they sat out (I didn't even cover them, they were so moist) the better they tasted. My ultra-picky boyfriend tried one and said, "It's sandy inside," but my father LOVES them. They are very filling cookies and have a nice, complex flavor. The sugar on top of the cracked surface is very pretty. I like how they're thick and chewy, plus somewhat healthier with the whole wheat. The only modifications I made were adding one cup of brown sugar and 1/2 white sugar, plus a little less flour than called for. Check them early because my first batch burned.
