Healthy Turkey Loaf

I doubled the recipe and added two cloves of garlic and a few shakes of worcestire sauce. Only used one egg. I put individual portions into a muffin tin and baked in a convection oven on 325 for 37 minutes. It tasted okay - I thought it could have used a little more spice, but I topped with salsa so it was fine. It would be a good idea to top with ketchup or something before baking.

Pumpkin Turkey Chili

This is pretty good. Like many other reviewers, I ramped it up a little - added 2 tsp cumin, a pinch of red pepper flakes, a bit more chili powder than called for, one bay leaf, and I also added a dash of pumpkin pie spice. Plus, one 8oz can of tomato sauce. The result is a nice, healthy chili with a moderate amount of spice. If I make this again, I might add one more can of tomatoes OR another can of sauce, plus will double the vegetables because I like veggies.

Blueberry Pumpkin Muffins

These are okay, but for some reason they did not rise for me. I did not overmix the batter. I also used pumpkin pie spice and if I had it to do over again I would use the spices the recipe called for, and a bit more sugar (I did use Splenda blend). So, I did not follow the recipe exactly, but cannot figure out why they did not rise.

Original Nestle® Toll House® Chocolate Chip Cookies

This is really, really great. I used half butter, half margarine so the cookies wouldn't fall flat. It would be hard to find a better chocolate chip cookie. I have a convection oven, and baked them for about 7 minutes at 350 degrees. They stayed moist and chewy, even after being refrigerated.

Spiced Butternut Squash Muffins

These are fairly good--however, lacking pumpkin pie spice, I decided to get creative and use cinnamon, nutmeg, a bit of clove, and a bit of allspice. The clove and allspice did not work well in the recipe, but thankfully I didn't put very much in. Learn from my mistake and refrain from attempting to add these spices. These are excellent with a bit of butter.
