Mushroom Rice

We really liked this rice. It makes a great side dish. It's flavors are subtle and don't overpower the main course. We find it's a good complement to roasted chicken.

Asian Orange Chicken

This recipe was AWESOME!!! It tasted just as good as our local Chinese restaurant. I love orange chicken so I added a little extra orange zest and orange juice. I didn't have any rice vinegar so I used apple cider vinegar instead and added just a pinch of sugar to it (as per substitutions I found on the internet). We all thought this recipe was the best and my 4 year old almost ate her weight in chicken. lol! Thanks for sharing a great recipe! :)

Braised Balsamic Chicken

This recipe was very flavorful, but too much for our family. The spices and balsamic vinegar were overpowering. If I made this again, I would cut the spices back by at least half and substitute half the balsamic vinegar with chicken broth. Everyone else seemed to love it, so maybe it's just my family that thought the flavors were too overwhelming. I did love how healthy this recipe was, though.

Mocha Walnut Cookies

Mmmm...these are GOOD! My husband just ran off with a plate to share with the guys at our automotive shop. Usually he's not big on sweets, but these are addicting! :) I'll be making these again and again!

California Chicken Casserole

Busy Day Barbeque Brisket

I would give this recipe more than 5 stars if I could. This brisket is absolutely delicious with the added benefit of being so easy to prepare in the slow cooker. What a wonderful meal to come home to after a long day. Thanks Shannon for sharing. This is one recipe that will be going in my favorites box. :)

Cinnamon Cookies II

I followed this recipe exactly with the exception of doubling the cinnamon. They are the BEST! And the smell coming out of the kitchen while they're baking is awesome! Yummy! :)

This was a good recipe, but with a few changes we would have liked it even better. Next time, I will use fresh spinach and put a layer of cooked fetuccini on top of the spinach.

Chocolate Chip Crispies

Wow! This is good and so easy. My four year old made this (with a little help from me, of course) and had so much fun. I love that you can make these in the microwave and the whole thing is done and cooling in about 10 minutes. We used mini chips and stirred them in after we stirred in the crispies. They did melt a little but it didn't take anything away from the final product. Thanks for sharing such a yummy recipe. My daughter told her daddy she made them all by herself. They're that easy! :)

Quick and Easy Pizza Crust

My daughter wanted pizza and I didn't have time to make a normal crust and wait for it to rise, so when I found this recipe I was so glad. It turned out delicious and was so fast and easy. Katie ate half the pizza and even my husband ate quite a few pieces even though he wasn't hungry. We'll definitely be making this again. Thanks for sharing!

Coconut Macaroons II

I changed the quantities up on this recipe but used the same ingredients. Used 3 cups of coconut (I chopped it up very fine), 1/3 cups sweetened condensed milk, 3/4 tsp. of vanilla and 3/4 tsp. of almond extract. I sprayed my cookie sheet very heavily with Pam and cook the macaroons until the tops start to turn light brown. Then after they are cool, I drizzle a chocolate ganache on the top (1/2 cup semisweet chocolate chips and 3 TBS. heavy cream. They always turn out perfect and I get tons of compliments! :) Thanks so much for sharing your recipe!!!

Spanish Rice I

I loved this rice, but hubby wasn't as impressed. He is more a Mexican rice fan (without the tomatoes). I did have to change a few things up because of what I had on hand. I used a 28 ounce can of diced tomatoes, added about a 1/2 tsp. of comino, and used a cup of water because I didn't have tomato juice. I left out the mustard and had to use a poblano pepper because I didn't have a bell pepper. Anyway, it was still delicious even with all my changes. (I would definitely recommend cooking the onions and peppers first before adding the rice.) Thanks for sharing your recipe!

Mint Chocolate Fudge

This was so good. I'm a huge mint and chocolate fan. I did it a little different, though. I used mini muffin cups and my pastry bag to make little individual layered candies. I also used white chocolate chips instead of the confectioner's coating. And I melted all of this in the microwave instead of on the stove. Turned out great and I'll definitely be making again.

I give it 5 stars for ease and 3 stars on taste. My daughter ate them up, but my husband wasn't as impressed. I might make this again for my 3 year old, if I'm in a big hurry to get something on the table.

Easy and quick. Sometimes I'll add a little vanilla to the melted chocolate/peanut butter mixture before adding the chex. Great recipe when you need something sweet...fast.

Beef Cannelloni Bake

This was a lot of work. It was good, but wasn't anything spectacular. Probably won't make it exactly like this again, but may change it up a little to make it simpler and quicker. The meat in the Cannelloni was really good. But the sauce on top was missing something.
