Chili Dog Casserole II

It was OK. It made a lot of food for one person (lasted for 6 meals). I guess I just didn't like the pairing of flour tortillas and hot dogs all that much. I probably won't give this another try, sorry.

Baked Ziti I

I've never had ziti before, so picked this for my first recipe. I also thought I didn't like sour cream at all, but in this dish it baked to a consistency sort of like ricotta in a lasagna. It was pretty good, but makes a lot of food for one person (probably 5-6 meals for me). It did wind up a bit watery, though. I guess the sauce mixture needed more simmering to remove water. Also, other beginning cooks (like me) should notice that you really do need a LARGE skillet for this.

Easy Cheesy Chicken II

Very simple, and fairly tasty at that. I was surprised how this turned into a decent cheese-flavored breaded chicken. Not a fantastic dish, but pretty good - I'm enjoying all 4 servings all by myself.

Creamed Beef

I'm not sure I've ever had this dish. It was just okay. As made, the sauce never thickened for me; but the reheated leftovers after refrigeration were much better in that respect. I also thought it wasn't nearly beefy enough; and the flavor was pretty bland. However, when served over toast it did cover all 4 food groups; that's why I was reminded of this being a school-cafeteria-style dish: pretty nutritious, but not all that flavorful.

Chicken Enchiladas V

I almost gave this 5 stars, but I can imagine there are even better enchiladas. Still, this was a fabulous dish. I enjoyed them fresh, and as leftovers. As a beginning cook, I was surprised that awesome enchiladas can be made without tomatoes in any form (salsa, etc.). This is one of the few allrecipes.com recipes I've put in my online "recipe box". Thanks a bunch!

Lilley Mashed Potato Casserole

I just ate this whole thing for lunch by myself. Not bad, not fantastic, but tasty enough - I find mashed potatoes pretty boring, but I do love cheese and onions, so this worked out nicely. I may make this again, as it's so simple to prepare.

Tex Mex Meatloaf

With the caveat that I'm a fairly new cook, I found this recipe to be both too watery, and too salty. If I made this again, I would drain the can of tomatoes/peppers. Perhaps this is implicit to experienced cooks, but I made the recipe as is. And I did put in only a teaspoon of salt, and not a tablespoon (which I know is a common mistake), and still the recipe was way too salty for me. Sorry to give this a 2-star rating, but I was disappointed with how this turned out.

German French Toast

I'm a newish cook, and I think this is the first time I've ever made French Toast of any sort. Plus, I'm not sure if I've ever even had Muenster either. That said, this was pretty easy to make, and tasted pretty good. I only give it 3 stars because it wasn't fantastic, but I still might make it again.

Chicken Enchilada Casserole I

I opted to shred the chicken and it worked well. Also, like others did, I found the result to be fairly soupy. Maybe we were supposed to drain the tomatoes and chilies? Or maybe I'll omit the chicken broth next time, like others did. With those quibbles, I have to say this was a wonderfully tasty dish. I'm only one person, so it lasted for days. And I'll surely make this again, perhaps with some of the others' suggested changes. Thanks for a great recipe!

I was a bit skeptical of such a creation, but it was pretty tasty. I found the apple flavor a bit mild, though. Some people may want to throw in more apples. I will make this again!

Baked Fettuccine Lasagna

I enjoyed making this for The Woman I Love. It had a good mix of flavors. I thought it was a bit heavy on the noodles, though. She also thought it had a lot of flavor without being overpowering, and was a great winter-time comfort-food dish.

Asparagus Soup in Seconds

This was probably the first soup I've ever made from scratch, so it was nice to start with an easy one. It was a bit thin (just a comment, not a complaint), but since I added the optional butter and milk, it was pretty tasty and rich. This was a nice soup to have on a cold winter day and I've added it to my recipe box so I can make it again sometime. Thanks!

Pineapple Cake I

Like someone else did, I give this 4 stars because it's not extra special, but still a very easy, tasty recipe. I couldn't find a "reduced fat" boxed cake mix, but I did make the cake without the oil that the cake-box recipe uses, so hopefully I achieved the same results, more or less. This was super easy to make, and very moist. I appreciated that it wasn't too sweet. Since I'm single, this whole cake lasted me about 5 days, but it was worth it.

Vodka Rigatoni

Wow, this is the first of several dozen recipes that I've awarded a 5-star rating to. It was a bit of work for a beginning cook, but well worth it (it made 3 meals for me). Two quibbles: I didn't really taste the vodka so maybe it might just as well not have been there; and the peas seemed to be an odd addition to the dish (they tasted good, but just seemed out of place). But the tomato-cream sauce with a quarter-pound of prosciutto was fabulous. I'll be making this for The Woman I Love soon.
