Wonderful Meatloaf

Sorry, but I found this a bit underwhelming. I made it exactly as written, using leaner (93%) beef. It tasted okay, but was fairly bland and unexciting. Pretty easy to make, but I've had much better meatloaves.

Easy To Do Oven BBQ Chicken

I thought this recipe was decent, but nothing special, so I'll give it a 3-star rating. It's certainly quick and easy, but I was a tad disappointed in the "BBQ" sauce. I thought the flavor was actually halfway between BBQ sauce and sweet-and-sour sauce; the latter has its place, but I was really hoping for a BBQ sauce here. I made the recipe exactly as written, using chicken thighs (I thought I'd bought another cut of chicken too, but it turned out to be all I had on hand). The recipe didn't say whether or not to discard the olive oil the chicken was seared in, but I chose to discard it. I served this on a bed of cooked long-grain white rice, which soaked up the sauce nicely. This was nice enough, but didn't really stand out.

Karen's Slow Cooker Pizza Chicken

I made it exactly as written, and found the results to be good enough, but nothing special. In my book, this gets a 3-star rating - not bad, but there are better recipes out there. It did come out fairly soupy (or saucy), so I had some of the leftovers on a bed of cooked long-grain white rice. To be fair, it's probably fairly healthy, with the chicken and various vegetables, but it just didn't impress me all that much.

Oatmeal Blueberry Muffins

These were okay - tasty enough, but nothing special. I made them exactly as written. Since I live at a high elevation, I'm used to baked things taking longer than the recipe says, and to things being wetter than expected. Surprisingly, baking these for 20 minutes was plenty of time - they were nicely browned, and not soggy at all; they had a firm-enough muffin texture. They were not very sweet at all (a plus or minus depending on one's tastes), but reasonably healthy, I suppose. I shared them at a meeting, and while they were almost all eaten, and I was thanked, there were no "wows" that I heard, and none from me either. They are quick and easy to make, maybe for "everyday" muffins, but these are nowhere near some fabulous muffins I've had in the past.

Apple Brownies

This was quite tasty, but it hardly resembled a "brownie" at all. That is, the texture was very loose and cutting it into squares was a futile effort. I shared it at a meeting, and others said they liked it a lot; I had two small helpings myself. So I can recommend this as a tasty dessert - just expect it to be a bit messy when serving it up.

Diner-Style Baked Potato Home Fries

I thought these were just okay. I tried to make it exactly as written. The potato slices were a bit fragile when frying, and either I didn't use a full 2 T. of butter, or I needed more, because I thought it was much too dry to fry properly. Since the results were somewhat bland, I added a few drops of habanera sauce after I plated these potatoes. They were okay, just nothing special; I think I'm partial to crispier, slightly wetter/greasier potatoes.

Citrus Ice

This tasted great, but relatively speaking it's a lot of time (and a bit of effort) to follow these steps, for what you get in the end. The "Prep Time" and "Ready In" times of 5 minutes each are obviously way off. I made this exactly as written, and it was over two hours until I tasted the results. I wasn't quite sure what kind of consistency I was shooting for - I found it melted fairly quickly, so it was just as well that I loved eating it. It tasted wonderful, and it'd be worth making it as a special treat for someone, but I probably won't be making it again just for myself.

Chocolate Macaroons I

I've never made anything much like this, but they turned out great. They weren't all that great to look at (perhaps I could've taken some time to make them a bit more uniform in size and shape), but the taste was very nice. They are a bit delicate, though. I made the recipe exactly as written, and shared these at a meeting, and several people liked them. Worth recommending!

Onion Soup Pork Chops

This was a pretty decent recipe. I made it exactly as written, using two boneless pork top loin chops, and measuring out 6 oz. of rice from two 4 oz. packages I bought. I was kind of surprised when I uncovered the dish and most of the water was still there - the chops and cooked rice were pretty much swimming in onion soup. The taste was pretty good though, and I might say that the second half leftovers the next night were even better, as the rice absorbed a lot of the soup. It does take an hour to cook, but for simplicity of preparation, and the fact that you get meat and a side dish out of it, make it worth recommending.

Fettuccine Bombay

This was pretty good, but I was a little disappointed since, given the ingredients and my tastes in food, I was expecting it to be more like awesome. I made it exactly as written, and was a little surprised to find it not all that spicy after all. Also, it was a bit on the dry side, since almost all the liquid comes solely from the can of diced tomatoes. This was good, mind you, and I gobbled it down over three days, but I just think that it could be even better. Still, worth making again, and even tweaking a little.

Best Brownies

I'm not sure these are the best brownies ever, but they were pretty darned good. I made them exactly as written. They turned out somewhat thin and chewy (not a complaint, just that they were not thick and cakey). They tasted quite nice too. I think this may have been the first time I ever made frosting for brownies, too. Worth making again; maybe I'll raise my rating.

Hurricane's Chicken Casserole

This wasn't awesome, but it was a pretty good, comfort-food kind of dish. I made it almost exactly as written, using Stove Top "savory herbs" stuffing. My amounts of chicken were slightly less, and carrots slightly more (2 x 8.25 oz. cans), than the recipe specified. I noted that even a baking time of 20 minutes didn't suffice to heat the dish properly, so the "until heated through" definitely applied in my case. This was kind of like chicken-pot-pie filling on a bed of stuffing. Thank goodness the stuffing was pretty savory, otherwise the dish would've been a bit bland; in fact, I thought the peas and carrots could've used some kind of seasoning. But this was definitely worth making, and I enjoyed it for three dinners in a row.

Easy Decadent Truffles

This was a great recipe. I'd never made truffles before, and was leery of them being complicated and not turning out right. But I made them pretty much exactly as written (I was a little sloppy with the melting and mixing steps). I let the mixture sit in the fridge for 90 minutes instead of 60, since I thought it was too soft for rolling after only an hour. I decorated the truffles 3 ways: with finely chopped almonds, with unsweetened cocoa powder, and with confectioner's sugar. Plus I got to use those little paper cups for the first time ever. I took these to a meeting, and got rave reviews from maybe 6 people - they were a hit. I must say that these are a little different from the usual truffle. I usually think of milk chocolate truffles. With these, the semi-sweet chocolate flavor was a little bit surprising - very tasty, of course, but it caught me off guard. And of course the cream cheese is kind of a surprising ingredient. It all makes for mighty tasty truffles. I highly recommend this recipe and just might make them again soon.

Basmati Rice

A pretty nice, but simple side dish. I made it to accompany the Curried Coconut Chicken recipe from this site. I made it exactly as written. This was also the first time I'd ever used cumin seeds. I've used a lot of ground cumin in Mexican recipes, and found the cumin seeds here to be a very nice taste. One problem, though; the rice developed a stuck-on layer in the bottom of the saucepan, so I wish I'd stirred it a little during cooking. Overall, though, a very nice recipe, and worth remembering for future meals.

Curried Coconut Chicken

This was a pretty good dish, but it made too much sauce, I thought. I made it pretty much as written, though the can of coconut milk I bought (13.5 oz.) was slightly smaller than the recipe called for. The recipe made a good amount, and lasted me for 4 dinners, served over cooked white rice. It was quite tasty, but if I made this again, I'd cut down on the liquid.

Butternut Squash, Apple, Onion Au Gratin

I thought this was not all that great. I guess I just don't like butternut squash very much. I made it exactly as written, but I suppose that the "sliced" squash should have been fairly thin, since in my case, about half the squash was still pretty hard after cooking. The apples were somewhat nice, though (I used Golden Delicious). I must note that this did not reheat very well at all; I had leftovers for several days and they were kind of yucky. Sorry, but I'm pretty sure I won't be making this recipe again.

Mom's Texas Chicken

This was kind of interesting, but a hitch with an ingredient and some inexperience with the technique made it just okay overall, in my opinion. I tried to make it exactly as written, but I quickly found out that 1/2 cup of cornflake crumbs was not enough. (I'd measured it by volume, and probably should have measured by weight instead.) In a minor vein, the amount of eggs used was too much (I used the standard "large" eggs, and the "medium" ones I see for sale would have been more appropriate). I'm not very familiar with the dipping and breading steps used here, so probably didn't do the best job, especially since I ran out of crumbs. I cooked the whole dish for 40 minutes (at which time my side dish was also done). It tasted decent, and the gravy was a nice touch (though there wasn't much of it). This was a nice, different recipe, but I think it could definitely be improved upon.

Smothered Potatoes

This was a simple dish, but I still found it fairly disappointing. I tried to make it exactly as written, but it didn't turn out to look much like the example photo. (At least, mine weren't nearly as brown.) I thought there was too much flour and it made the dish into a crumbly mess. And I thought that maybe the liquid ingredients (oil and then water) were too little. This was just nothing special to me, and not worth trying again.

One Skillet Corned Beef Hash

I thought this was okay. I made it exactly as written. The potatoes I used were russets (?) from someone's garden, and I didn't know if they were the right kind of potatoes to use, but they came out fine. The cider vinegar was an interesting ingredient, but overall, I don't think I liked it all that much. This was the first time I'd ever made corned beef hash from scratch, and I've eaten better, but I'll give this a 4-star rating because it's fairly easy and it makes a large amount (lasting me for 3 large meals).

Quick Ziti with Swiss Cheese and Ham

This was kind of good, but just a bit on the bland side. I tried to make it exactly as written, but in two stores, the only ziti I could find were Barilla's "Piccolini" mini ziti. And as for the ham, I had to choose between honey ham and smoked; I'm glad I chose smoked, because the more robust flavor helped the dish. This was decent for a quick, cheap meal, but it was nothing special, in my opinion.
