Clam Chowder

This was a very nice soup. It's hardly "from scratch", but it's quick and easy and made a nice thick, tasty chowder. I made it exactly as written. (That "1 teaspoon butter" is an odd amount; I thought it was probably a typo for "1 tablespoon", but I followed it as is.) It made two big bowls for each of two dinners in a row. I would have liked even more clams though! Recommended.

Funky Beans

This was pretty good stuff - a lot like a chili, but not quite. It makes a *lot* - it lasted me for five days. I made it exactly as written, using all the 85% beef I had, and a little 93% beef. I found that it took a lot longer to brown all the meat - maybe 20 minutes on medium heat. Also, the recipe didn't say whether to drain the meat afterwards, so I decided not to. As for the "chili powder to taste", I used up what I had on hand, maybe 1.5T. It was seasoned, but hardly "hot" to my taste. All in all, this was worth making, especially for a carnivore.

Honey Roasted Carrots

I rarely cook carrots, so this was kind of new to me. I made it exactly as written, and the results were decent, but nothing spectacular. I used a baking time of 50 minutes, but even more might've been nice. I might make this again sometime, since it's so easy.

Quick Chili I

This was a decent chili, but it didn't wow me. I made it exactly as written. The "hot pepper sauce" I used was original Tabasco Sauce. I did notice an inconsistency with one ingredient: "Italian-style diced tomatoes" (e.g., tomatoes with a few herbs) in the ingredient list, became "diced tomatoes with chili peppers" (e.g., Ro-Tel). I used the former. Also, it didn't say whether to rinse and/or drain the beans, so I didn't. The chili came out a little soupy to my taste, and the sugar added a sweetness not often seen in chili. It was nice enough, and I ate it all over about 4 days, but it just didn't stand out among chilis I've tried.

Citrus Frost

This is a great drink recipe, though I picked the wrong time of year to try it (it's about 30 degrees outside today). I made it exactly as written, using "low pulp" orange juice, which was all I had on hand. I've never measured out ice cream for a recipe, so wasn't sure if to go by volume or weight, so I weighed out 10 oz. (1 1/4 cups) on my kitchen scale. This is quick and easy, and turns out nicely thick. In fact, I had one glass and kept the blender in the fridge for a few hours until I had the rest; I was glad to see that the consistency stayed the same. It has a pretty strong citrus taste, so you'd have to like those flavors, but I can heartily recommend this.

Francisco's Blender Salsa

This was okay, but didn't really stand out. I made it exactly as written; it made two blenders full. I did take some to a meeting, and a few people said they liked it. Personally, even though I do like cilantro, I found this to be a bit too heavy on the cilantro flavor; I guess I like more tomatoes and onions, and garlic would have been nice too.

Breakfast Muffins

These were quite tasty. I tried to make them exactly as written. But my blueberries were from a fresh batch I froze maybe two months earlier, so I thawed, rinsed and stemmed 1 cup of them for this recipe. Also, I was finishing off a can of baking powder, so I used a little more than 2 1/2 teaspoons - probably more like three. The muffins came out nicely fluffy. I found that the minimum baking time of 20 minutes was plenty - they were nicely golden-brown by then. I don't think I'd ever done the "lightly touched" test - I've always used a toothpick - but it worked! I guess I can recommend this recipe for quick and easy breakfast muffins.

Stir Fried Snow Peas and Mushrooms

I guess this was okay - I made it exactly as written. Fresh vegetables are good, but the sauce was a little blah and mainly just collected in the bottom of the bowl. Nothing special, really, in my opinion.

Flip-Flop Cobbler

I've made a couple of different cobbler recipes so far, and this was pretty simple to make, and quite tasty. I made it pretty much as written, except since the canned peaches came "in heavy syrup", I opted to omit the second 1/2 cup sugar (as mentioned). Also it was funny that when I drained the peaches, the syrup came to exactly 1 cup of juice, which was what was needed. I wasn't sure what kind or size of baking dish to use, but an 8x8 glass dish worked great. I might not make this again, but it lasted me for four desserts, and it's certainly worth trying.

Oatmeal Waffles

These were pretty good. I've made a few different waffle recipes in the last few years and these stood out a bit. The oats added a little heartiness, and the hint of cinnamon is different too. I made this recipe exactly as written, and it yielded 7 waffles. I didn't, however, "top with fresh fruit and yogurt" - just the usual real maple syrup.

Maple Syrup Pudding

"Very simple and easy," indeed. I gathered from glancing at some prior reviews that this was a pudding in the English sense (dessert) and not the American one (custard). But I didn't quite know what to expect. It turned out to be a simple, yet tasty kind of cake with a pronounced, but not too strong, maple flavor. I made it exactly as written, and it turned out fine. But in my case, I think the 45 minute baking time was a little too long, as it was fairly well browned. This is nothing fancy, but I liked it well enough for three nights' desserts. Worth a try, but I'm not sure I'll be making it again.

Creamy Vanilla Pudding

This was better than I expected. I love chocolate pudding but had always thought vanilla pudding was fairly boring. I tried to make this exactly as written. Unfortunately, when bringing the mixture to a boil, I turned away for just a few seconds, and a bit of it boiled over. After finishing the recipe, I had a bowl of it, served warm as recommended, and it was very nice and smooth. However, leftovers the next two days had bits of what I guess were cooked eggs in them. I suppose I should blame that on my technique, i.e., not mixing things well enough. But this might be worth trying again and doing perfectly. I'd never made anything like this and it was pretty cool, and aside from the small solid bits I created, it was as creamy and tasty as promised.

Apricot Beef Stir-Fry

This was fairly tasty, but one of its best features is how visually appealing it is, with the various colors. I made it almost exactly as written. My can of apricot halves ("in heavy syrup") was a tad larger at 15.25 oz. For the beef, about 1/3 of it was some top round I had in the freezer, and the rest was some fresh bottom round; it totaled about 3 ounces more than the recipe specified. The recipe is pretty quick and easy to prepare, and makes a lot - it lasted me for three fairly big dinners, served over some "Texmati" rice. It's not fabulous, but for the looks, ease, and yield this is well worth recommending.

Peach Cake I

This was a great dessert. I think I've made a similar recipe once or twice before. This is really a lot more like a cobbler than a "cake". I made it exactly as written, except that I baked it for a couple more minutes (52 in all) in order to get it browned enough on top. It's light-textured and rich, and one of the minority of dishes that I'm tempted to wolf down in one sitting (but I made it last for 4 nights in all, and it reheated in the microwave just fine). If I might quibble, I'd say it needs a little less butter and a little more peaches. Given that, this might not quite be the best recipe of its type. But it's so easy to make, and so tasty, that it's well worth recommending.

Chocolate Waffles I

How interesting - I don't think I'd ever even heard of such a thing before. I made them exactly as written, and they turned out pretty well. At breakfast-time, the waffles' flavor reminded me of "Cocoa Puffs" cereal, in a non-crunchy waffle form. I didn't know what the "hard sauce" was going to be - another new phrase to me - but it turned out to be kind of like the frosting or glaze that's usually on top of a batch of cinnamon rolls. Upon reflection, I think the hard sauce is probably a much better companion than maple syrup might have been. This didn't quite "wow" me, but it was very good, and a nice departure from the usual waffles. My yield was almost 6 waffles, by the way. I recommend this recipe, and just might make them again some time.

Quiche Lorraine II

This was very nice, maybe my first time ever making a quiche. I tried to make it exactly as possible, but had to increase the cooking time to 35 minutes. By then, the crust edges were getting close to burning, so I stopped. Unfortunately, the quiche was fairly runny (liquid, as opposed to just oozing); this is a common problem with fruit pies I make, probably because I live at a high elevation. Despite not getting the consistency right, I thought the taste was wonderful - I'm not sure I've ever cooked with Gruyere. It is fairly easy to make, so I'll go ahead and recommend it.

Cinnamon Swirl Bread

This was a very nice recipe. I made it exactly as written. At 45 minutes baking, the toothpick test showed it wasn't quite done yet, so I went the full 50 minutes. By then, the outside was a little too done. So the optimal baking time is somewhere in between. But that's quibbling. I enjoyed slices of this, slightly reheated, for a few days' breakfasts. It has a nice cinnamon-sugar taste throughout. Recommended!

Chili-Cheese Dog Crescent Casserole

This was great. I'll give it 5 stars. Not that it's quite a Beef Wellington recipe or something, but for what it is, it was yummy. Most of the ingredients are packaged foods, and this is a basic comfort-food recipe. It's quick and easy to make, and for a somewhat common recipe, it had a slightly elegant touch with the dough topping and sesame seeds. I tried to make it exactly as written. I'd never heard of the Pillsbury dough sheet, but when I went to the store looking for it, I found it right away. I've never seen shredded American cheese for sale, so I shredded/crumbled about a third of a pound of deli-sliced American cheese. I baked the dish for 20 minutes, enough to slightly brown the dough. One sign of a five-star dish is that I wanted to eat the whole thing in one go, but I managed to make it last for 2 consecutive dinners. Highly recommended!

Easy Alfredo Sauce I

This was pretty good. I'm not an Alfredo aficionado; I've had it before, but I'm probably not as picky as people who love it. I don't think I'd ever made it from scratch before, but this was pretty easy (I made it exactly as written), and turned out well. Even a leftover portion, refrigerated and reheated the next night, turned out just fine (I was worried about that). A bit decadent, but I'd recommend it if someone wants a quick and easy Alfredo.

Scallop Pesto Pasta

I thought this was just okay. I tried to make it exactly as written, but I guess I had trouble with the technique. I rarely have floured or breaded things come out properly, and these scallops were no exception. A good amount of the flour came loose and added a "dry paste" component to the dish, which was a little odd, taste- and texture-wise. I did, however, like the idea of pasta tossed with pesto - I don't think I'd ever tried that before. Also, the recipe didn't specify the heat level at which to cook the scallops; I initially tried medium, but quickly bumped it up to medium-high, which I thought would better cook the scallops. This was okay, but I've had much better scallop dishes.
