Chorizo and Lentil Stew

Great flavor, but I made a few modifications. I sauteed chopped onions with the garlic before adding the chorizo. I also added chopped carrots, turnip, potatoes, and leeks along with the celery. Since I added all these extras, I upped the water by another cup and added some chicken bouillon to add more flavor. This definitely made it more "stew" like. So great to eat on a cold day!

Ground Pork Omelet

So easy and delicious! I sauteed some sliced onions and garlic in the pan before I added the egg mixture. Wonderful with chili sauce on the side. I used about half the recommended amount of fish sauce so it wouldn't be too salty.

Eggplant Caviar

it was missing something in flavor. Also, I baked for 10 minutes on each side and when I cut it open, it wasn't cooked in the middle, so I baked longer, but still--it was hard to scoop out the insides and the texture wasn't quite as smooth as I would have hoped.

Easy Caramelized Onion Pork Chops

Really delicious! I followed another reviewer's advice and added a tsp of sugar to my onions while they caramelized. This was so easy to make...I will be making it again and again!

Quick Chicken And Wine

Pretty good with the following modifications: I floured the chicken before dipping in egg, doubled the parmesan, and mixed in some spices with the parmesan before breading. Chicken turned out very moist and tender. the wine gave it a bit of a citrussy taste, which complemented the salty parmesan and butter.

Buttermilk Pancakes II

Great recipe! My pancakes were nice and fluffy. I added a fruit topping (frozen berries and sugar, microwaved, then mashed together) and my friend raved about how delicious they were. This is going to be my standard panacake recipe from now on.

Pumpkin Pie for Dieters

I layered crushed graham crackers between two layers of the pupking filling. This gave the mouse a little more substance, texture and flavor. The next time I make it I'll cut back on the whipped topping on the top layer by half. Otherwise, a very yummy dessert that is very easy to make!

Asparagus with Parmesan Crust

This is my favorite way to cook asparagus. It is so easy and the asparagus has a great texture! I usually leave out the vinegar. I have also used frozen asparagus spears and it turns out fine.

Light Wheat Rolls

Wow! What a great recipe! My husband raved about how soft these were. I rolled them up into the cute little spirals and lay them into a 9 x 13 pan. They baked sort of like cinnamon rolls. I substituted olive oil for the butter and I added some Cajun seasoning for a little kick. Even with the Cajon seasoning they were great both sweet with honey and with a pasta meal. I will definitely be making these again.

Crabmeat and Corn Soup

Chocolate Chocolate Chip Cookies I

So delicious and rich! These cookies disappear fast at parties. I use chocolate chunks and sometimes add Heath Bar bits. Lately I have been microwaving them and serving them with ice-cream on top. Yum!

Rosemary Marinated Lamb Chops

What a wonderful recipe! This is now the only way I prepare lamb. It is so easy! I substitute red wine for white and pomegranate juice for orange. I also use the standard amount of marinade but for only about 2-3 chops to make sure the meat is coated and there is enough for a sauce. They go great with roasted red potatoes.

Avocado, Tomato and Mango Salsa

Absolutely delicious! I make this all the time. Sometimes I substitute pineapple (fresh or canned) for the mango, and sometimes I leave out the avocado. I have also added corn. This recipe is easy to tweak and it always turns out fabulous!

Apple Yogurt Muffins

These were ok. I substituted chopped dates for the raisins, splenda baking mix (half splenda half sugar), and I added chopped walnuts. I thought they weren't sweet enough. For my second batch I sprinkled brown sugar on top of the original topping. Mayb next time I will add more apple. Also, I think there may be too much baking powder because it had a bit of a chemincal taste fresh from the oven.
