Mama's Potato Salad

This is a really delicious potato salad, especially with the background flavor from the horseradish and the kick from the freshly ground black pepper. I added celery (in equal amount to the onion) and some fresh dill. I also used equal parts honey mustard and deli mustard, instead of the yellow mustard; the honey mustard cuts the tang of the horseradish a bit and provides a really nice flavor. Thanks for the dish!

Stewed Cabbage

Everyone enjoyed this recipe as a great side dish! I modified it to make it a bit healthier by cooking the onions, celery, and garlic in 1/4 cup vegetable broth, instead of the butter, and it came out great. Thanks for a quick and easy addition to any meal!

Vanilla Brownies

After reading the reviews, I was very cautious about the baking time and checked on the blondies after 25 minutes. They were perfect, golden on top, soft and moist, but not undercooked. I did not add any chocolate, although I think white chocolate chips would have been great. The only change I made was to add an extra 1/2 teaspoon vanilla.

French Onion Soup X

Perfect! The broth of this soup is rich and tasty. I omitted the sugar, even though there's hardly any, but I don't like too-sweet French Onion Soups, and I used Vidalia onions, which are sweet on their own. I slathered some minced garlic on the toast, instead of just rubbing a clove, since we love garlic in this house. You may miss the gooey mouth-feel from the lack of gobs of cheese, but the flavor is still really good, and this is much healthier. Be careful not to add too much black pepper without taste-testing, as it is quite noticeable, but not excessive, as long as you like pepper. Great recipe!

Easy Hummus

This was a truly easy recipe. I used 1 T of the reserved bean liquid and made the following additions: 2 T fresh Italian parsley (minced), 1/4 t paprika, and 1/2 t salt. My jalapeno pepper amount was 2 peppers; the kick is great. Thanks for this great, homemade hummus!

Brocomole Dip

This recipe turned out tasty, but not as much reminiscent of guacamole as I was expecting. However, I modified it, which may account for the difference in taste, which was unique, but pleasant. I used nonfat, plain yogurt in place of the sour cream and mayonnaise, and I added lime juice, extra chili powder and onion, some garlic salt, and cumin. It is slightly spicy, and it's refreshing, as a dip with wheat crackers.

Tasty Buns

Wow, what an easy and fast bread/roll; I can make this quickly, after work, for an accompaniment with dinner. I added dried tarragon and dill to mine, and I make it as a dinner roll recipe -- but with the added herbs, it's nice as a savory breakfast addition, as well. I always substitute extra virgin olive oil for the vegetable oil, and I even placed less than called for, in the original recipe; it always bakes perfectly. Thank you for a delicious roll!

Zesty Tomato Soup for One

I love this recipe; it's so quick and easy to prepare, and I like the slightly chunky consistency, versus those of the very smooth and boring canned tomato soups. I added cilantro before serving. Thanks for this wonderful contribution.

Vegetable Quiche Cups to Go

This recipe is wonderful -- what a time-saver! I used egg substitute with peppers, celery, and onions already included in its ingredients, so I didn't even have to dice up those veggies! They baked perfectly, and they taste great for ANY meal on-the-go. Thanks!

Chocolate Chip Shortbread Cookie Logs

Great cookies! I made these twice this past week, and they are really quick and easy to prepare. The second time around, I did not dip them in chocolate, as I knew the people for whom I was preparing them would be overwhelmed by all the chocolate :-) and they still turned out deliciously. There is plenty of butter in the cookies; if you use a non-stick cookie sheet, you do NOT need to grease it. Thanks for the awesome recipe!

Six Can Chicken Tortilla Soup

To make this a vegetarian recipe, I substituted a can of cut green beans (sticking with the canned vegetable theme) for the chunk chicken and vegetable broth for the chicken broth. I added 1 t cumin and a sprinkling of garlic powder, included the tortilla chip and cheese recommendation, and this turned out to be such a pleasing and easy recipe.

Beth's Spicy Oatmeal Raisin Cookies

Delicious cookies -- I soaked the raisins in water and 1 T brandy for about an hour before beginning the recipe. There is just the right amount of sweetness and spiciness, in my opinion, but baking time must be monitored closely to attain the perfect consistency! Thanks for sharing!
