Easy Baklava

This recipe was rediculously easy. It was also delicious. It wasn't nearly as sweet as I was expecting. I used a combination of pistachio nuts and almonds. I chopped them in the food processor. I think that I will make about half of the nuts into a finer grind and leave the rest a little chunky. I doubled the cinnamon. Next time, I will make sure to cut it into smaller pieces. That way each piece gets a little more syrup. This is absolutely a keeper recipe.

Easy Greek Skillet Dinner

This was pretty tasty. I used diced tomatoes instead of soup. I liked the texture. The feta cheese really adds a nice tang.

Baked Dijon Salmon

I am not a fish eater, but I love this recipe. I have made it for guests on two occasions, and they really enjoyed it as well. I highly recommend this recipe.

Parmesan Spinach Balls

I made this for a big party. I did the prep the day before and pulled it out to bake the day of. They disappeared. Maybe a little less butter could be used.
