Pineapple Cake II

I just made this and absolutely love it. I made two . One for a party tomorrow and one to sample to make sure it's good. It's really, really good. It's not a light fluffy cake, rather a moist dense cake. The Buttery Milk Syrup is fantastic!! I thought there was a lot of it but when I tasted it I was glad there was so much. I may top the party cake with raspberries to provide a tart counterpoint to the cake and syrup. This will be a staple for me from now on.

Downeast Maine Pumpkin Bread

Very easy. After reading reviews I subbed half the oil with applesauce, doubled the spices and sprinkled the top with cinnamon sugar. Sprinkling the top not really necessary but a nice touch. Good moist bread without being wet (yuck!). There are a lot of recipes out there that don't use nearly enough flour and are gag-inducing wet. This one is really nice. I'm serving this for a church coffee hour and will add chocolate chips to a batch or two for variety. Thanks for the recipe.

Peach and Pineapple Sorbet

Made it today and it is wonderful. Fresh seasonal peaches and supermarket pineapple made a delicious sorbet with perfect texture. Don't know how many sorbets I've tried that froze like bricks. Try it, you'll like it!!!

EZ Meatloaf

My aunt taught me to make this in the early 70s and I've loved it ever since. My husband doesn't like meatloaf so I haven't made it in decades. Was glad to get the ingredient amounts. I mixed the ingredients early in the day and was a bit disappointed. I'm pretty sure that if you mix right before cooking the flavor pops a lot more and there is a little crisp from the stuffing. Also, if you love the crispy outer edge of the loaf consider ditching the loaf pan and shaping it on a baking sheet. Lots more crunchy goodness. Oh, and I don't care for tomato sauce on meatloaf either.
