Carrot and Fennel

This is the first time I've ever used fennel. This recipe is so delicious. I didn't have fennel seeds, so just used a tiny bit of ground coriander as seasoning, along with salt and pepper. I'll be making this again, for sure.

Boiled Chocolate Delight Cake

I made this cake yesterday and followed the directions exactly. It is a delicious, moist cake and was easy to prepare, even though I had never steam-baked a cake before in my life. The chocolate cinnamon flavor is so nice. I served it with a warm vanilla sauce and my family loved it. I'll keep this recipe for sure.

Pecan Pie V

I tried this and followed the directions pretty much exactly. I did chop the pecans too finely, though, as my mini-chopper tends to overdo the nut chopping. Nevertheless, everyone in my family loved it. I will make this again for sure. I recommend it!!

Sweet Potato Soup

I made this today and we had it for supper. Here are the changes I made: I used less nutmeg (one teaspoon, and even that is plenty) and I used a lower-fat type of cream: 5% fat instead of 35% fat content. The soup was thick enough, due to the potatoes, I guess, so this lighter cream was fine. It was appreciated by the whole family. It is real tasty, creamy, and filling. I'll make it again!

Banana Cake VII

This was a really good banana cake which my family loved. I did not have allspice, so I made a mix of nutmeg, cinnamon, cloves, and coriander, enough to equal 1/4 tsp. I also had only two ripe bananas, which came to a bit less than 1 and 1/2 cups, so I added applesauce to make up for the missing 1/4 cup of mashed bananas. These changes are minor, so I imagine I'd be equally pleased if I followed the recipe to the letter. Thanks for a good, easy recipe!
