Juicy Thanksgiving Turkey

The turkey came out just ok, but the worst part was the gravy made from the turkey juices. Because of the champagne, the gravy was very sour and tart. So sour it gave me the "bitter beer face" every time I tasted it. The gravy completely ruined my entire thanksgiving dinner because I pour gravy over everything! Thank goodness it was only made for immediate family. If I had made this for more guests, I would have been embarrassed! I actually had to make my own homemade chicken gravy the day after thanksgiving so we could use that with leftovers. I think the turkey had great flavor from the spices but the gravy would be a million times better without the champagne. I will never make turkey this way again!

Frozen Vegetable Stir-Fry

Perfect easy delicious dish! Great flavor, and super simple. I changed a couple things. I wanted to make this the main dish so I started by sautéing onions & chicken thighs (cut into small pieces), until chicken was cooked thru. And i didn't have frozen veggies so I just used fresh: added yellow orange and red bell peppers and zucchini to the chicken. Also added slivered almonds which was a nice addition! Then once all that was cooked, took off heat and added the sauce, which I did exactly as recipe called for. But I tripled the sauce, and it turned out to be the perfect amount for how much I made. Served over rice. This turned out so good!

Vegetable Pasties

Based on all the reviews, I opted to buy the pre made pie crust instead of making from scratch. And I wasn't disappointed! Crust and filling turned out great! Everyone loved this. I also switched up the veggies. I sautéed onions and garlic, then added red orange and yellow bell peppers, carrots, and zucchini. Then when those were almost done, I added shredded chicken and broccoli. Took off heat after only a minute and mixed in one can of cream of mushroom soup. Cut up pre made pie crusts into smaller empenada sized pieces, then filled with mixture. Good thing about these are that you can really fill them with anything! Will def make this again, and try different filling ingredients.

Cajun Chicken Pasta

First time I made this my husband said "this is the best pasta you've ever made!" It was a hit. I did modify a couple things, based on other reviews. I used half and half instead of heavy cream and yes it is more watery, you just need to add a couple tablespoons corn starch and let simmer. It reduces to the perfect creamy consistency (just give it a little time!). I also don't like green bell peppers (I used yellow & orange bell peppers) so I added some spinach and it was a perfect addition. I think you could really add any vegetables if you want. I also used chicken thighs and they were great. And someone suggested adding Cajun seasoning (in addition to what you coat the chicken in before cooking) while you're cooking and that was a great suggestion! Because then you can make it as spicy as you want. I think I only added about 1 additional tablespoon hole cooking. All in all, a family fav!! Def looking forward to making this a lot more!

Awesome Slow Cooker Pot Roast

Super easy and so good! its so super flavorful even thought it is such a simple recipe. made it with mashed potatoes, and the roast made enough gravy for both meat & potatoes! was a huge hit at Christmas dinner.

Mashed Maple Sweet Potatoes

The pecans and maple syrup really add a nice touch to basic mashed sweet potatoes. I thought that adding the brown sugar would be too sweet being that the maple syrup & sweet potatoes are sweet enough, so I made it without. Then realized it needed that extra touch of sweetness, added the brown sugar and it was just right! This recipe was such a hit at thanksgiving! Everybody went back for seconds and ate all the left overs. thumbs up!!

Easy Meatloaf

Really liked this recipe, except the sauce was way too sweet! Both my husband and I had the same reaction to sauce. Second time, I didnt use brown sugar at all and instead added 1 tbsp soy sauce (to both meat and sauce). This greatly improved the recipe! Also, followed the advice of other reviews and sauteed onions first with garlic & butter, used seasoned bread crumbs, and doubled the sauce recipe - all worked great! Meat comes out really juicy and tender, which I really liked!
