Strawberry Slush

I absolutely LOVE this slush recipe, and I cannot recommend it highly enough! I changed the recipe somewhat, by using fresh strawberries (approximately 2 cups of pureed fresh strawberries). I also used an entire 26-ouncer of vodka, to make this more of a "drink" drink :-). I have made other slush recipes before, great summertime drinks. This one is an excellent way to use up fresh picked strawberries at the beginning of the season. I serve it in a ratio of 1 part slush to 1 part 7-up. You can adjust the ratio to suit your taste.

Tom Ka Gai (Coconut Chicken Soup)

My husband and I really enjoyed this. I substituted chicken stock for the water, and I added fresh sliced mushrooms and sliced strips of red pepper for more interest. Plus I added more chicken than the recipe called for. A very tasty soup (just add more cayenne if you like it hotter) that was fast, easy, and quite similar to the authentic Tom Ka Gai we've eaten many times in Thai restaurants.

African Chicken Stew

Fast, easy, and delicious! This will definitely become a family favourite! I cut the amount of black and red pepper in half to make it milder, also I added an extra cup of water after the peanut butter was added because it got so thick.

Yummy Yam Casserole

This is a quick and easy sweet potato casserole, especially light on cleanup, as you microwave the sweet potatoes to begin with. Everyone in my family enjoyed this very much as a Thanksgiving side dish: we all felt it tasted like pumpkin pie!

Mexican Cream Cheese Rollups

These were great, and very easy to make. A real no-brainer appetizer! I found the filling in the recipe was only enough to spread thinly on 4 - 10" tortillas, however: I would say double the amount of filling if you are serving a crowd. These were universally popular with the crowd I served. :-)
