Soda Cracker Candy

Reviewed: Dec. 10, 2004
My recipe for the same calls for only one cup butter, one cup brown sugar, and one bag of chips. The most important thing to remember is to make sure that you bring it to a boil AND THEN set your timer for 3 minutes. My mum still hasn't figured that part out yet. (hers separates in the fridge-- still tasty, but poor texture) Everyone loves it, and it is so very simple! I put mine on cinnamon grahams sometimes... they're a little sweeter. My favourite is still the saltines, though! You can also toss a handful of white chocolate chips on top with the dark chocolate, and swirl... it makes them very pretty. I have relatives who are allergic to nuts, so I just sprinkle holiday jimmies on top, too. Very versatile, and ABSOLUTELY FABULOUS! Also of note, try the Reynold's No Stick foil to line your pan! It works with no additional effort! I use it for EVERYTHING!

Clark's Quiche

Reviewed: Mar. 14, 2011
My children (16 and 11) H. A. T. E. quiche and said this was the greatest thing EVER. I have nothing else, really, to say. That says it all. It has earned its place of honor on the monthly rotation schedule! Thank you!

Microwave Apple Crisp

Reviewed: Jul. 9, 2006
This is a very quick and easy recipe. My 6 year old daughter and I whipped this together in less than 15 minutes. We used July apples, and they were quite tart-- the perfect foil for the sweet cinnamon topping! We'll be making THIS one more often!

Dutch Babies II

Reviewed: Mar. 14, 2011
Fast and easy, these make a wonderful addition to the weekend breakfast lineup. Tired of the usual pancake/oatmeal/egg/waffle/french toast rotation? Try this. It takes only minutes to make, tastes incredible topped with macerated fresh berries, and some homemade whipped cream! I doubled the recipe and baked it in a heavy-gague, high-sided, 10-inch round cake pan. I used bacon grease instead of oil. Soooooooo awesome!
