Broccoli Cheese Soup III

This soup is great! I usually throw in a bit of pepper (my family does love the black pepper) and a little extra liquid and a little extra cheese, but it's really good as is with no mods. It also cooks up really fast and can be made with frozen brocc in a pinch, so it's become one of my favorite go-to quick lunch/dinner recipes. *NOTE*: Just finished making this for lunch (yet again). If you can get your hands on some Cougar Gold (white cheddar made by students at Washington State University in Pullman) -- HOLY SMOKES, Batman. It was AMAAZING. Yum. Big time.

Blackberry Apple Pie

I made this for a large family get-together. Used 6 Granny Smith apples on this (medium) and 600 g (about 3 pints) of blackberries -- but I had to bake it in a casserole dish (no pie pan). It turned out amazing. I added a little cinnamon, but other than that followed the recipe exactly. So delicious!! Not even any leftoever crumbs in the dish after my family got done with it.

Ruth's Grandma's Pie Crust

This was a GREAT pie crust recipe. Was visiting some family in Germany and they wanted "typical American apple pie", but you can't buy pie crusts in the store there-- so I attempted making it from scratch. This crust came out PERFECT and they LOVED it. We actually made a second apple/blackberry pie because they loved it so much. Thanks for a great recipe!

Holiday Chicken Salad

This recipe was had too much mayonnaise flavor for my family (which to be fair, none of us like mayonnaise much anyway). So I added about 8 oz of sour cream and doubled the paprika and added some extra pepper. Also added lots more veggies. It was even better the second day. YUM! Will definitely be making it again (with the sour cream). NOTE: we bought the Costco chicken salad the other day and I just got told that this recipe was better.

Authentic Mexican Tortillas

I generally use a different recipe from my aunt's family. These were okay, but I did have to use the oil in the pan, which I'm not used to (always used just a hot pan). Were good for enchiladas though.

Streusel Topped Blueberry Muffins

This is a great recipe! Perfect for an ex-patriot craving a little bit of home. These came out just like the muffins I used to get at my favorite coffee shop in my hometown. The only thing I did was add a little extra lemon zest and a tiny bit of lemon juice to the muffin batter and I doubled the flour called for the streusel to make it easier to crumble.

Dumplings

This is a great budget stretcher! The dumplings taste great, are very very easy to make and all from stuff that you already have in your kitchen. I love that you can use the ol' "that looks about right" for the measurements and they still turn out great.

This recipe is really good with good ol' classic sausage or hamburger gravy. Only thing to watch out for is that like muffins, this shouldn't be mixed (or kneaded) too much-- they won't turn out as nice texture-wise.

Extreme Banana Nut Bread 'EBNB'

First tried this recipe during a study abroad year, when another friend and I were craving banana bread and when I made it for my family and friends after coming back, it immediately became a family favorite. Really easy to make, perfectly moist and wonderfully banana-walnut flavor! Definitely recommend this one! It also freezes really well, just take it out of the freezer the night before and in the morning you have fresh banana bread for breakfast. Yum!

Truck-Stop Buttermilk Pancakes

This recipe is really good! I'm living abroad and was craving real fluffy pancakes and this recipe definitely did the trick. I tried to reduce the recipe and it still made a TON of pancakes, so it was a good thing that the batter was okay (covered with saran-wrap) in the fridge for a couple of days, because I had pancakes coming out of my ears. :)

Snickerdoodles I

These cookies truly remind me of home, baking cookies with my sister, making a mess and enjoying the smell of baking cinnamon. The only thing I did was add about 1 tsp. vanilla, and since I'm overseas, I used a 2 tsp. of a premixed cream of tartar/baking powder packet. They tasted wonderful, and all of my international friends want the recipe! Kudos!
