Boilermaker Tailgate Chili

Wow, that was good. I didn't have any ground beef, so I just used some not-spicy sausage. Our whole family loved it. The depth of flavor was fantastic.

Roasted Brussels Sprouts

These were awesome! I even burned mine accidentally and they were still delicious! I loved how they tasted almost buttery inside. Makes me want to eat Brussels sprouts every night. :)

Wonderful Waffles

After many years of searching, I finally found my favorite waffle recipe! I don't do all the complicated steps, either. I just pour every thing in and mix it with a wisk. I also use white sugar instead of brown, just because we like the taste of a slightly sweeter waffle.

Best Hot Crab Dip

I made this with imitation crab and it was still delicious. Received rave reviews when I brought it to a get-together. I also did not have the capers or the special seasoning, so I left those ingredients out and didn't miss them a bit. Great recipe! Thanks. This is one of those dishes I crave from restaurants, so it's so nice to know I can make it at home.

Ginataang Manok (Chicken Cooked in Coconut Milk)

Wonderful tasting, easy recipe! I didn't have fresh ginger so I used powdered. I also used boneless chicken breasts, and only one can of coconut milk because that's all I had. And it was still delicious! Even my kids loved it ... and ate the spinach. *shock* I'd like to try this recipe exactly the way it's written sometime. I'm sure it would be even better. I served this over jasmine rice with a side of stir-fried veggies (eggplant, zucchini, red and yellow peppers). Delicious, healthy, quick dinner.

Sonora Chicken

This is a great recipe. I changed it a bit to make it more healthy. I replace one can of soup with boiled cauliflower & carrot (about half a large cauliflower and a few small carrots) that I then puree in a blender, along with milk and the other can of soup. My children don't even notice that the extra vegies are in there. I also tend to boil my chicken and then shred it. I just find that it's quicker that way. This recipe tastes great with a side of rice.

One-Two-Three Cake

I loved this cake, even though I had to change the recipe a bit because I live overseas and didn't have all the ingredients available. The best part, I thought, was the frosting. I didn't have a whipped topping, so I substituted 1 cup heavy cream whipped together with the pudding and a couple pieces of crushed up pineapple with about 2 T. juice. It was delicious -- I made it three times in a row for three different events and everyone loved it. The best part is, it's easy, easy, easy! Some other combinations of cake mix and stir-ins that I tried were strawberry cake mix with pineapple and strawberry cake mix with mashed bananas. Both combinations were delicious. I thought the strawberry banana cake tasted best with vanilla pudding in the frosting. The strawberry pineapple cake tasted great with white chocolate pudding in the frosting.
