Chef John's Quiche Lorraine

Delicious. I didn't go through all the steps. Just whisked everything together and also used mozzarella cheese as that is what I had. Excellent! The leeks and thyme really make this special.

Chicken Asparagus Roll-Ups

Delicious! The variations I made were minimal....didn't zest the lemon, just juiced it. I didn't have bread crumbs so I crushed some butter crackers and mixed it with mayo mixture to put on top. Before I mixed crackers in, I did put some of the mixture in center too and I think this prevents it from being dry. I cooked at 425 for 30 minutes, uncovered, and it was delicious. I think next time I would cover last five minutes or so as it was starting to burn on top. After microwaving asparagus for 1:30 minutes, they were perfect consistency coming out of oven. Great and easy!!!

To Die For Fettuccine Alfredo

Absolutely loved this! I did 18 oz. of pasta and made 1.5x the sauce. I added blanched carrots and broccoli and rotisserie chicken. It would serve 4-6 people with big appetites! Best for sure! But I'm sooooo full!

Bourbon Spiced Pork with Sweet Potatoes and Apples

This is excellent and so easy. I used boneless pork chops this time and turned out great. Make sure you cut the sweet potatoes small like the recipe says so they are done when the meat is done. 1" cubes is perfect. I quarter an apple and that seems to work well also (I used an apple slicer the first time and they were smaller slices and they were a tiny mushy). This is so delicious!! You can find the spice mix with all the other packet seasonings in most stores.

Quinoa and Black Beans

Very good!! I hadn't used Quinoa before and I was weary of the texture, but got over that after first bite. Perfect spices for us. I only used one can of black beans and felt that was plenty. Thanks for the healthy recipe!!

Garlic Chicken Stir Fry

This was by far the best stir fry ever! I added broccoli and celery, and didn't use cabbage. You could use anything you want though. I thought the onions would be too much, but they aren't. I would probably double the green onions and ginger next time. I also doubled the sauce. Excellent!!!!!

This is amazing!! I like using celery seed with it and will try the bread crumb idea next time. I actually used halibut which was incredible. Definitely a keeper!!!

Low-Fat Blueberry Bran Muffins

These are excellent!! I didn't change a thing and they came out tasting like they were high fat muffins (aka delicious)!!! I would recommend using fresh blueberries...keeper!!!

This was good but definitely spice up the flour mixture to your liking...seemed a bit bland without it...I used garlic powder and still needed something. I'll try the paprika suggestion next time in addition to garlic.

This was good but it was missing something..I think I'll try the spicy chutney suggestion...I also used thick ham slices and I really feel like deli ham would have been better. I will make again though, with those changes.

Delicious Ham and Potato Soup

This is excellent. I had a little problem with the thickening of the milk too, but I think it may have part inpatience and part using skim milk. I also didn't have celery, so I used a few healthy dashes of celery seed. Oh, and I also used sweet potatoes instead of white potatoes. Excellent, will make over and over again (so quick!!)

Pollo Fajitas

I thought these were really good, especially for how low fat they are. I also used chicken breast, and I didn't have hot sauce, so I used a few red pepper flakes...you could definately still taste the bite. I doubled the sauce thinking I would need it (I am a sauce person) but it was a mistake. There was plenty to marinate the chicken without doubling it. The result was the sauce was running out of the bottom of the fajita. It wasn't a taste issue, but a messy issue and not necessary. Definately a keeper. Thanks for posting!

Roasted Asparagus and Mushrooms

This has the BEST flavor. I didn't add the rosemary because I didn't have any, but added some seasoning salt instead...it was excellent. My asparagus was on the thin side so it took 10 minutes and it was perfect.

Zippy Summer Shrimp

This was very good, and very easy...I am always nervous I overcook shellfish, but this was foolproof. Excellent flavor. Will definately make again.....I make extra so I can cut up the extra for pasta tomorrow night.
