Beef, Green Chili and Tomato Stew

I was concerned when making this stew if it would seem like it was missing something since there are so few ingredients. My husband and I both LOVED this stew. It was very flavorful & filling and didn't need anything else other than crusty bread to soak up the stew. I didn't use a beer but added extra beef stock instead. I also floured the meat before cooking - it seemed to thicken up the stew. I cooked it for 3 hours & the meat was tender & perfect. Great recipe.

Chicken Pot Pie IX

This was really good. I loved the flavor of the filling. I cooked the chicken in olive oil & it turned out nice & tender. I also sauteed mushrooms, button & shitake, onions, garlic, carrots & celery before adding to the filling. I added frozen (thawed) corn & peas at the end so they wouldn't get mushy. It was really great & my husband & picky daughter both loved it too. A keeper!

Oven Barbecued Beef Brisket I

This was great! I cooked for 2 hours at 300 then after putting b-bque sauce on, I upped the heat to 350 for another hour. The meat shredded nicely! I put the meat on hoagies & topped with coleslaw. It was a great sandwich... a hit with the whole family.

Asparagus with Parmesan Crust

Cinnamon Rolls III

Just made these & there were wonderful. We are not big sweet eaters so I left out the frosting & pecans, topped warm rolls with butter & it was a perfect treat. I prepared the cinnamon rolls as directed but put the uncooked rolls in the fridge last night. Let them sit at room temp. this morning for 30 minutes then baked as directed. They turned out great. This will forever be my recipe for cinnamon rolls.

Creamy Mushroom Soup

Great flavor. I only had button mushrooms so I used them. I also used sweet yellow onion & garlic. The color of the soup isn't pretty but it sure tastes great.

Green Beans for a Special Occasion

Love these. I saute the beans with a touch of olive oil, salt & pepper. Once they are slightly soft, I add a TON of (homemade) roasted garlic & pine nuts. Cook for a few more minutes & serve. They are wonderful!

Cream of Broccoli Soup I

We really enjoyed this soup. I used a bit of fat free half & half & the rest skim milk. I used chicken broth instead of water/bullion and pureed the entire mixture. I used double the cheese & it turned out great. A keeper.

Taqueria Style Tacos - Carne Asada

I LOVE THIS RECIPE! My husband is a huge fan of carne asada tacos & I finally found THE recipe. I used flank steak & marinate for at least 24 hours if I can. The onion relish is amazing, especially with a little extra lime juice. However, the roasted salsa makes the taco! I don't use the chili (because my two year old eats with us) & I add cilantro to the other veggies before roasting. These are the best tacos & the only way I make them now. Thank you so much for sharing this wonderful recipe! I love this website.

Ronaldo's Beef Carnitas

This is better than any restaurnt shredded beef I have ever had! My husband and I loved it. We have made tacos & tostadas with it & I know it will be great with enchiladas & burritos. The key is to use a chuck roast that IS NOT lean. You need the fat to make it tender & juicy. I will make this over & over.

Asian Salmon

This was a nice change for salmon. I am not the biggest salmon fan but my husband loves it. He really enjoyed the different flavor of the marinade. The only thing I changed was, 1 tablespoon of olive oil instead of 2. It wasn't oily at all.

Baked Orange Roughy Italian-Style

This is a great white fish recipe. I use mayonaise instead of butter & it makes the fish so tender! I also soak the fish in milk for about 30 minutes prior to cooking - it helps remove fishy taste & smell. Definitely a keeper!

Curried Coconut Chicken

I have never reviewed a recipe until now. I really loved this dish. I did not use the tomatoe sauce but added mushrooms, green beans and topped off the finished dish with cilantro. Served over Basmati rice. The whole family loved it.
